How do I use the chicken carcass?

I can't work this out, I know I'm being stupid! I want to make a bone broth but I don't know how to get the carcass completely clean of meat first. I also don't know if I have to? But if I don't wouldn't I be reheating chicken whenever I ate the soup/broth? And then be in food poisoning hell?

I pressure cook my raw whole chicken in an instant pot but you could also slow cook. Once it's cooked take the meat off the bones. Bones back in the pot and slow cook again for 24 hrs. I would add veggies and add seasoning in the last 6 hours. Once cooked I freeze the bones and use them again in the next broth. Chicken can get a bit fatty so I don't usually out the skin back in the pot with the bones.

Sorry to answer your actual question,once it's all cooked. I refreeze in smaller portions and get those out to put in soup or whatever. I think it's ok to freeze / reheat cooked meat one time.

I don't bother picking all the meat off - adds to the flavour! It has a good long boil so I don't think it will be harmful. If I'm making soup straight away with the stock, I'll bung the meat into that too - much easier to get off the bones at that stage.

I always add carrot, onion and celery along with bouquet garnis, bay leaves and pepper corns when making stock, then strain it all at the end.

Thank you! Yes, you can reheat once - I think I was counting the soup making as another reheating so that would prevent me freezing and reheating for a third time?

Assuming you've roasted it first, I put it covered in the fridge once cooled down. Next day I'll take off any decent meat and us it in a meal the same day (risotto etc), making sure it's been properly heated through.
what's left gets broken up and put into a large pan, covered in water and bought to the boil. I then let it simmer for 3 hrs or so, drain off through a sieve. Depending on amount (say over a litre) I'll reduce it at a boil in needed. Then it's into a glass container, once cooled it either goes into the freezer, or the fridge for use within a couple of days.
