This was a recipe I used for BLW finger foods, and once the children got bigger I’ve used it in picnics www.healthylittlefoodies.com/curried-lentil-bake/

BBC Good Food has a very popular recipe for spicy root veg and lentil casserole, but it’s really more of a winter warmer. Good Housekeeping has a nice lentil stew recipe.

Boil til soft with chopped onions and any other veg you might want like carrots, in stock with curry powder added.
Drain and cool (spread out on a plate is faster) then add to 3 or 4 beaten eggs, mix well and transfer to flan dish or shallow cake tin. Bake off til set. Eat hot or cold.

I do a lentil bake.

Red lentils, cherry tomatoes, tinned toms, red pepper and onion. A touch of paprika too. Stewed for a little while then in to the oven with a layer of mash on top. Plus cheese towards the end.

Broccoli or green beans on the side when serving.

My favourite is lentil and bacon soup with slow roasted tomatoes. Roast tomatoes who garlic, oregano, splash of red wine/balsamic vinegar, pinch sugar, olive oil. Add to pan with red lentils and cooked pancetta/bacon, add stock/water and simmer. Cooks really quickly. Part blend. It's the only homemade soup I've never got bored of.

You can make without bacon too, just as tasty, it's the slow cooked tomatoes which bring most of the flavour.

I like it instead of mince with mushrooms in bolognese sauce (cooked for longer) half a cup (125ml you need this as theres no fat from the mince) of extra virgin olive oil, onion, garlic, carrots, celery, tinned tomatoes, tomato puree, red wine with spaghetti a parmesan or similar to make it more virtuous I have it with wholemeal spaghetti and lob some frozen spinach in at the end yum!

Excellent recipe in one of Hugh Fearnley Whiitingstall book. Chicken thighs, skin on, cooked with red lentils like a casserole. Flavoured with rosemary and good stock. Chicken has to be sticking out of the lentils and stock for the skin to crisp. One of my favourite meals.
