Meals for a right mixed bag

I want to watch my calories, dh is struggling with ibs and wants to reduce his carbs, tomatoes, brassica and pulses, the kids are 3 and 5 and while they're good with veg, like most kids they prefer plain foods not mixed, and we eat low meat and dairy for environmental reasons. It's important to me that we all eat together round the table as I think it's teaching the kids a healthy relationship with food. What on earth can I cook to hit all of these buttons?! Any suggestions really appreciated...

you could use veggie meat substitute for the pancetta or just not include it. It does use dairy though, although you might be able to use dairy substitutes?

I have a very fussy DP and I don’t eat dairy or carbs. To be honest most of our meals revolve around meat or fish which he’ll have with some veg and potatoes and I’ll have with loads and loads of veg. Or I’ll make things like a curry but he’ll have rice and I’ll have kale. I do the same with bolognese but you probably can’t make that minus tomato. Stir fry is also popular, he’ll have minimal veg and noodles and I’ll have no noodles but loads of veg.

You have my sympathy, I feel like I spend my life trying to come up with more interesting meals. He’d be very happy with a pizza every night of the week Hmm

Unfortunately the kids are not keen on stir fry, it's all a bit combined for them, but we can gradually work on that.

DH now says he suspects heavy creamy meals cause him issues too 🤦🏻‍♀️

Self-service works well in our house for family meals.

Eg:
-sausages with choice of chips, roasted veg, salad and broccoli.

  • tortilla wraps with choice of chicken, salad, veg,cheese

People then choose which begins they want. And I find the kids eat more veg this way as they try to grab it before their sibling does !

I think I'd start with asking your husband to come up with 10 meals that meet his fairly exacting requirements and then adapt them to make them meet everyone else's. Alternatively, assume that 2 different meals are going to be needed each night, one cooked fresh and one that's reheated (either leftovers from their meal the night before or batch cooked and from the freezer).

But I am struggling to see what your husband thinks he should be eating, with no carbs, pulses, dairy, limited meat, v limited range of veg and think he should be finding most of the solutions

Ah the limited meat is my doing and we'll eat most veg. The kids are, well, kids, but OK with familiar veg. But yes I see your point. He's not a great cook so he's probably more stumped than me.
