Anyone know what this is called?

I had a lovely pasta sauce in a restaurant last week, and I want to make it for friends on Friday, but I don't know what it's called, so I can't look it up.

The pasta was papardelle, and the tomato based sauce had bits of really tender beef, red wine and chilli.

It really was more than a sum of its parts, though. There must have been some secret ingredients in it.

Can anyone find me a recipe, please? (If it's just called pasta with a beef, chilli and red wine sauce, I will be very embarrassed!)

Sounds like Amatriciana Sauce

Ingredients
2 tbsp Olive oil
200g unsmoked streaky bacon, chopped
2 medium Onions, finely chopped
1/2 tsp chilli flakes
400g tin chopped tomatoes
50ml Red wine
1/2 tsp dried Oregano
175g rigatoni or dried penne
25g Butter
1 tbsp grated Parmesan cheese, to serve

I don't know. Does it need a name? Just say its an old family secret recipe!

Sounds like ragu which is a good old proper meat sauce (bolognaise for common mortals)

No, definitely not bacon. I think it maybe was a classic ragu - but no liver or pork in it. Do you think I could call the restaurant and just ask for the recipe? Would they think I'm a nutter?

could they have substituted bacon for beef in the amatriciana? sorry for harping on about that sauce, but I love it, and the subtle spicy chili flavour!

no you are right, ammatriciana is made with bacon (or rather pancetta) and chili
