I hate cooking at lunchtime but also have become totally fed up with sandwiches. And salads leave me hungry! Any ideas of no cook lunches? Thank you Smile

What about super quick things like beans on toast?

I generally just have a portion of leftovers from the day before

Fruit, cheese, bread, salad: my favourite at the moment is a punnet of very fresh strawberries, a ripe room-temperature cheese like Brillat-Savarin or camembert, good crusty sourdough (toasted) and a salad of green leaves, cucumber, avocado, walnuts and dill dressed with olive oil, salt and lots of lime juice.

Any of the following eaten with ryvita or oatcakes: Smoked mackerel pate, Tuna salad, chicken salad, egg mayonnaise, hummus, taramasalata etc

Big plate of sliced tomatoes, ball of burrata broken on top, pesto thinned down with some olive oil as a dressing, pine nuts, eat with ciabatta

How about making something in advance that can just be eaten over the next three days?
Tuna pasta with sweetcorn, red onion and peppers
Cous cous with chickpeas and roasted veg
Fritata

Or just mix up your bread options
Toasties are always superior to sandwiches
Bagels with cream cheese
French stick with cheese and chutneys
Pita with grated carrots and hummus

Roast a chicken (the ones in the bag you just stick in the oven - no prep, no washing up, as you just throw away the bag. Then you have roast chicken for wraps, baguettes, instant noodles, savoury rices (pouches of pre-cooked, flavoured rice are 75p in Waitrose and a pouch is two portions)

Good quality tin of soup with warmed roll and butter - cooked in microwave in 3 mins.

Good instant noodle pots (Itsu, Kabuko) with fresh chopped spring onions and petit pois that will cook themselves in the stock as the noodles swell.

Use leftovers from evening meals, e.g. cook extra pasta to make a quick pasta salad, more potato to make potato salad. If you don't mind cold pizza, bake one while you are making tea, extra chilli or casserole can be used for lunch

I'm super boring

But at the start of the week I take to work
A packet of bice crackers, cheese (at the moment I really love seriously strong spreadable) a couple of punnets of nice cherry tomatos, a jar of pickles, olives and some brined garlic cloves.
I look forward to lunch every day and never get bored.

Mixed bean salad with tuna, mackerel or sardines.

Salade Niçoise, cook extra new potatoes in advance, likewise hard boiled eggs & green beans. This makes a very substantial meal.
Hard boiled eggs keep in the fridge for at least five days, so are handy for quick meals.

Asian style broth with added noodles, spring onions, frozen peas, gyoza, leftover broccoli etc etc. Use home made chicken stock or a good bouillon powder. Cooks in two minutes.

This time of the year look out for ready dressed crab, smashing for a quick lunch.

I find rice as one of those quickly cook-able dishes. You can prepare different kinds of rice recipes like vegetable rice, steam rice, rice with gravy. You can prepare them quickly and will even enjoy these filling dishes

Sandwiches with different breads so pita, wraps, naan bread, chiabatta etc.

Get some toaster bags and make hot cheese sandwiches,

Ziplock omelette - put beaten egg and whatever you fancy in a ziplock bag and put in boiling water - it's sort of cooking but I don't count using the toaster or kettle.

I have a 'bento' lunch box, it's nothing like an actual bento but has 5 compartments so it's quite good to get a balanced meal of 1 carb, 1 protein, 1 fruit, 1 veg and then one extra.

Couscous can be made with just boiling water as can cracked wheat, noodles and pasta (just cover and leave for 10 mins).

Hugh Fearnley-Wittingstall does some 'posh pot noodles' that you just add water to. You could prep 2 or 3 at a time.

A couple more ideas:
Pack of ready made sushi, widely available from supermarkets.

Home made Russian salad, with potatoes, vegetables and sausages or ham. A good use for left over new potatoes & cold sausages! Grin

Pouches of ready made cous-cous or other grains and pulses complete with fish, usually salmon or tuna, made by John West, Rio Mare etc. Need no cooking, just open the pack, come with flavours like Mediterranean or Moroccan.

Also, a large ripe tomato per person, slice off a little lid at the top, then with a spoon scoop out and discard all the seeds. Fill the cavity with ready made prawn cocktail, pop the lid back on. Indulge in the taste of summer.
