Mince and moist diet?

Hi all, my elderly Dad is out of hospital and has been put on a 'mince and moist' diet because of problems swallowing. Does anyone have any recipe suggestions? Otherwise he will be bored of endless cottage pie/fish pie. I'm happy to have mixture of stuff I can prepare and ready meals the carer can heat up. Thank you! I'll also post this in the elderly parents topic.

Root veg mash
gravy
bolognaise
flaked tuna
mashed potato with cheese grated into it
Cauliflower cheese with well cooked cauliflower chopped up small
Mushy peas
Tuna mayo
Pasta sauce on cous cous
Soups especially creamy ones if he needs the calories
Cream cheese

Ice cream, custard, tinned fruit, bananas, stewed fruit, cream

Make sure any pasta/rice/couscous is cooked to almost soggy. Like you might for a little one. I have dysphagia and it's a common misconception that pasta and rice are somehow easy to swallow. The same with mashed/baked potatoes. I need to have them in a more puree-like state (so lots of milk & butter). Anything too thick and gloopy can also get stuck when the swallow reflex is weak.
