Can I do that then? Is it really that simple? How long should I cook them for? Thanks chaps.

dry fry them first to crispen up the bacon then bake them for about half an hour at 180 degs.

More if the chicken chunks are bigger.

Do an extra one to cut into just to check (unless you have a temp probe )

(sorry forgot to say to wrap in foil so the bacon doesn't dry out)

I 'experimented' with this recently.

I got two chicken breasts stuffed them with pesto and pine nuts and wrapped them in bacon, seasoned and baked them in the oven (wrapped in tin foil) in a little olive oil for about 40mins.

I served on pasta with a tomato, garlic and basil sauce poured over.

Simple and tasty.

yum, sounds good, i think i need to get creative.

I get a chicken breast, flatten it out slightly, spread some wholegrain mustard on, the wrap it in a couple of rashers of bacon.
Bake in the oven for 35-40 mins (depends on thickness of chicken breast).
I always do an extra one, because sliced up it makes a yummy sandwich the next day.

goats cheese and pesto is another good one to fill them with.

Use streaky bacon or proscuttio and the fat will stop the chicken drying out.

If you have problems keeping bacon on - use cocktail stick (soaked in water) to pin it on.

I just wrap and cook for about 25-30 mins 180 fan oven.

fryalot · 24/09/2007 15:04

or you could stuff the chicken breast with brie or stilton...

TheArmadillo · 24/09/2007 15:06

Tomato slices and basil also good.

Nice looking one in magazine the other day (though I haven't tried it yet) was marscapone with herbs and crushed garlic mixed in.

I usually do it with salad and roasted new potatoes.

cardy · 24/09/2007 15:11

wow, so many versions to try.

IME - streaky bacon does work better. In fact when I tried it it stuck to chicken so although I used a cocktail stick it wasn't necessary.

hoxtonchick · 24/09/2007 15:11

i think a stuffing of cream cheese, sundried tomatoes, basil & garlic would be good.

How about spinach and ricota?

talking about soup - does anybody know how to make brocolli and stilton soup?

MaureenMLove · 24/09/2007 15:22

DH does a wonderful chicken & bacon thingy with chicken livers and mushrom in it.

fryalot · 24/09/2007 15:25

broccoli & stilton soup:

boil broccoli till soft, add salt, fried onions and a touch of pepper. Grate in stilton until you get the taste you want then whizz it all up in a blender.

I use one broccoli and about half a packet of average sized stilton.

You need to make sure that the water you cook the broccoli in just covers the veg or it'll be too watery.

cardy · 24/09/2007 15:30

thanks. so you use your broccoli stock as the liquid for the soup?

I love broc and stilton soup but am sure mine would be yuk.

fryalot · 24/09/2007 15:31

oh yeah, broccoli stock for soup, deffo.
