A storage question: fairycakes made today - needed for Thursday ...

Will they be all right in an airtight container or would it be better to put them in the freezer?

NB. I'm going to ice them on Wednesday.

Freezer. They might keep OK if iced, but definitely not otherwise.

arrange flat in a freezer bag on the kitchen surface - don't pack them too tight or they will get wonky edges. Suck air out of the bag, then seal.

When defrosted, I sometimes put them in a low fan oven for a few mins to 'freshen up', as they can be a bit soggy, then ice away

I would make them, store them in an airtight tin, and don't open it until wed night, then ice and put back. They will be fine.

I thought about freezing cakes, has anyone actually done this, I was worried they would go soggy on defrosting??

UCM I do it for work all the time, and it is fine for plain sponge etc, and most tray bakes. The little trip in the oven takes the sogginess away

I used to freeze, then ice while frozen. Much easier and stops cake crumbs getting in your icing. Tho that won't work with Tickle's trick (never had a problem with defrosted cakes going soggytho)
