I cooked a plain sponge cake this morning for my DD's birthday on Saturday - today is the only chance I have to cook it but I'll freeze it in the meantime so that it doesn't dry out for the big day.

In any case ... I cooked it and tested it and took it out the oven at about 11am and everything went well until it rather drastically deflated. I then had to go and collect DD2 from nursery.

Fast forward to now. I'm thinking that the cake is really heavy and cut a square out of the bottom of it ... to find pretty much uncooked cake mixture in the middle.

My question is ... if it's going to be covered with icing etc. (ie. it doesn't have to look pretty) - can I put it back in a slightly lower temperature oven now and continue to finish cooking it?!! Would that work to redeem the situation?

no, I think you'll have to start afresh I'm afraid. not sure it'll cook through properly

Well, the recooking will rectify the uncooked stuff but not the deflated cake.

FWIW I'd re-do it. Probably at a lower temp and for longer.
