Lamb curry

I love a good curry but I admit to being a poor curry cook.

I rely on the spice jars that are available (and then you add in the tomatoes etc) but to me, they're always too fragrant and too 'hot', and not tasty enough. The milder jars are still too fragrant.

So, my butcher is delivering a kilo of large lamb pieces today and I'm keen to make a curry from scratch, tomorrow. Got a click and collect on the go so I can start ordering spices.

I love saag, also lamb Gosht - medium curries. Don't like the fragrant after taste from jars. Can anyone advise me please on what to buy and what to do to make a really tasty dish.

I don't follow a recipe as such just what my mum used to do (south Asian). For a kg of lamb, slice thinly about 3-4 medium onions. Add a can or two of chopped tomatoes (or use 5-6 fresh tomatoes). Add two teaspoons of chopped garlic and ginger and add water to cover the meat. Cook covered for about an hour (depends on how tender you want the meat). At the end you can open the lid and turn up the heat to dry out the water. When there isn't that much water left and it looks like a stew then pour oil in and fry it while stirring. The longer you do this tastier it is. The spices like coriander, cumin, garam masala, red chillies, salt can be added to taste at this point. Usually a teaspoon of everything would work but taste after putting spices in and do it according to your taste.
Any vegetable can be added after you have got the meat ready and cook with lid on and low heat. Spinach will need a bit of time to mix in and cook properly.

I think that is pretty much the method I use. I think the OP would benefit from building up a stock of spices. I usually buy them from a local Indian grocers and the two makes are TRX and Natco - Turmeric, Garam Masala, Cumin, Cardomom, Coriander, Tandoori Masala, Hot Madras Curry powder, Garlic and Ginger paste. We use tinned plum tomatoes, fresh coriander. We also buy Basmati rice in the 10kg sacks because it works out a lot cheaper.

I don't love or hate Jamie Oliver but I've done my weekly meal plan all from his website this week.

He's good, I have to admit.
