Clearing out my pantry (cupboard under the stairs!) and for some unknown reason I have 6 bags of pecans that need using up. Any tried and tested delicious recipes for them?

Six bags of pecans, what riches!

Try Russian Teacakes
225 g unsalted butter
55 g icing sugar
1 teaspoon salt
90 g fairly finely chopped pecans
270 g plain flour
Beat the butter, sugar and salt until very light then add the flour and pecans, mix until thoroughly combined. Roll small pieces of dough into balls and bake at 160C for 15 to 20 minutes. They should go slightly brown around the edges but like shortbread they won't get brown all over.

Most people roll them in more icing sugar, first as they come out of the oven and then again five minutes later. I'm not keen on the extra sugar but that's up to you.

You can add vanilla extract if you like or a bit of spice - I like cardamom or ground mace. Make them very small and people will eat them as if they were popcorn.

If you like mashed sweet potato then top it with chopped pecans browned in a bit of butter - delicious. This would go nicely as well sprinkled on a baked sweet potato cut in half and spread with butter.

Nigella Lawson's recipe for spiced nuts is amazing.

She uses mixed nuts but it would be real luxury to use just pecans!

INGREDIENTS
500 grams unsalted mixed nuts (including peeled peanuts, cashews, brazil, hazelnuts, walnuts, pecans & whole unpeeled almonds)
2 tablespoons coarsely chopped fresh rosemary (from two 8cm / 3 inch sprigs)
½ teaspoon cayenne pepper
2 teaspoons dark brown muscovado sugar
2 teaspoons maldon salt
1 tablespoon unsalted butter (melted)

METHOD
Preheat the oven to 180°C/160°C Fan/gas mark 4/350ºF.
Toss the nuts in a large bowl to combine and spread them out on a baking sheet. Toast in the oven till they become light golden-brown, about 10 minutes.
In a large bowl, combine the rosemary, cayenne, muscovado sugar, salt and melted butter.
Thoroughly toss the toasted nuts in the spiced butter and serve warm. And once you eat these, you will never want to stop.
