What are your veg curry combinations?

Veggie household.

I like to keep a stash of mild curries in the freezer for DC so that DH and I can have a hot version.

I usually do chickpea and a combination of whatever veg is on the turn in the fridge when I get round to batch cooking it.

But I'm trying to stop 'hiding' veg in food so I want to make it more apparent to him.

What are your veg combinations please?

Chickpea, spinach and tomato has gone down well.

I'm looking for some inspiration please :)

Aubergine, pumpkin and cauliflower are my absolute favourites.

This is also really good and not too spicy if you don't use the dry chili, just fresh green ones:

2-3 tablespoons of oil
1 large onion sliced
A sprig of curry leaves
2 garlic cloves finely sliced
2 green chillies sliced into two
1/2 teaspoon turmeric powder
250g of green beans(you can use any type of beans, eg-long beans, etc, I’m using frozen french beans)
1/2 cup water
1 teaspoon chilli flecks(depending on how spicy you want the beans to be)
1/2 teaspoon curry powder
Salt to season

Place a pan over medium heat and pour in the oil(3 tbs). let the oil heat for a minute. Once the oil heats,
add onions(1 large), curry leaves, garlic(2), green chillies(2), turmeric(1/2 tsp), salt and sauté over
medium heat for 2 minutes or until the onions turn soft and translucent.
Add the beans(250g)to the pan and combine all ingredients together over medium heat for 5 minutes.
Pour in the water(1/2 cup)and simmer for further 5 minutes until the water completely evaporates.
Add curry powder(1/2 tsp), chilli flecks(1 tsp)reduce heat to low, cook for another 5 minutes until all
ingredients are combined well.
Check for seasoning and add salt if necessary, serve warm.

A friend does a lovely beetroot curry. I've never seen it anywhere else though!

I do a butternut squash, chickpea and cauliflower coconut curry which is a good combination. Or I use sweet potato or even just normal potato in it which is really nice.

My lot love this one; www.bbcgoodfood.com/recipes/coconut-squash-dhansak. I use fresh butternut squash and roast it in the oven first. It's yum!

Ooo, beetroot - sounds interesting.

DH does a mean egg omelette curry. Much nicer than it sounds - honest.

Chunky cut sweet peppers, courgette, Apple, spring onions and kidney beans.
