These sound lovely, I'm going to try lots of them. Our favourite is the river cottage Cambodian wedding day dip

Absolutely delicious, the recipe makes loads, I separate into 3 & freeze 2 portions which makes up for it being quite a faff to make!

Muhammara and Romesco sauce are both lovely and easy

Baba ganoush and Tzatziki are my absolute favourites

My favourite blue cheese dips is
75g Blue cheese (Saint Agur or danish blue in pandemic times)
50g mayonnaise
150g Greek yoghurt
1/2 tbsp white wine or cider vinegar
Generous dash of worcs. sauce

Smoosh it all together - hand blender works best for me. Season carefully as quite salty. Best with cucumber even better with bbq chicken wings

@ClientQ agree -these dips are not for sharing!

@ilovemydogandMrObama - how do you roast the aubergine? Halved in the skin? And then discard the skin?

Thanks :-)

Edwina you can dry it on a sheet of kitchen paper in the microwave. It goes papery and then you can just crumble it to a powder

I’ve added this thread to my watch list so I can make many of these, they all sound lush!!!

@notnowlater - Yes, just roast in the oven, although roasting on BBQ is amazing. I would try and get as much liquid out as possible though after roasting.
