Healthy recipes for someone who hates veg!

I'm looking for some healthy recipes but the only problem I'm a very fussy eater and I hate pretty much all veg in varying ways! I am a new mum and it has dawned on me that when my daughter is older and I am trying to get her to eat her veg, I will be having to eat it too to set a good example but I can currently list the veg I will eat on two hands.
Examples of my weird eating habits include I can manage tomatoes in a pasta sauce or chilli but not raw or in a salad. I like raw carrots but not cooked, I will eat lettuce in a sandwich but can't stomach an actual salad bowl and I really don't like it when things touch on my plate...you get the idea!
I do periodically try to eat veg that I don't like to see if my taste buds have changed but so far they haven't.

So have you got any healthy recipes that include veg that you can't taste or that taste really good?

I eat a lot of fruit so definitely going to try adding kale to a berry smoothie.

I think for me it is more the taste than the texture of veg that puts me off.

My usual a meals consist of chicken korma, chilli, spag bol, lasagne, burgers, pizza etc. So all very heavy on carbs and meat 😂

If you like vaguely Thai flavours and a crunchy coleslaw this is a lovely recipe:

I can’t stand creamy coleslaw so I really like this recipe. We have it stuffed into hot buttered oven baked French bread baguette with slices of cold roast chicken. Also keeps really well in the fridge for packed lunches. Sometimes I do a pink version with a raw beetroot julienned.

The good news is all your regular meals translate really easily to adding veg.

Korma - add veg (green pepper and onion are the obvious starting point). Make a mild veg curry instead (I’d roast veg from the veg box with curry spices - butternut squash, sweet potato, carrot, aubergine, pepper, onion, tomatoes would all work well just pick what appeals to you, and then chuck in a tin of coconut milk, a squeeze of lime and serve with a sprinkle of chopped coriander and chilli if you fancy. Or serve a smaller portion of your usual curry with a veggie side dish. Loads of Indian veggie dishes to choose from.

Spag Bol - start with a mirepoix (a finely chop carrot, onion and celery base). You can buy this very cheaply pre chopped and frozen - some stores will label it vegetable base or county vegetable mix. Add in finely chopped mushrooms and peppers (I like red, yellow or orange for this). Use a tin of tomatoes not a jarred sauce. You’ll have a couple of servings of veg per portion. You can also use this for lasagna, and serve with a side salad (salad doesn’t have to be leaves or tomatoes if you don’t like them). There’s also loads of vegetable lasagna’s to try.

Chilli. As with the spag Bol I’d use onions, peppers and mushrooms, tinned tomatoes and kidney beans. You could also try adding a tin of sweetcorn, grated carrot and/or making a four bean chilli. If you like chilli would you like something like fajitas? There’s a tray bake version with onions, peppers and steak that’s really quick and easy.

Pizza - veggie feast! Ok it’s still going to be mostly cheese and bread but honestly you can put pretty much any veg on a pizza. Serve with a salad or slaw of some sort or crudités and a dip or two.

Burgers - loads of veggie burgers you can make, or falafel? Again salads and slaws on the side.
