Veggie recipes for new Mum please

My friend has just had her fourth baby.

I want to make her and her family a meal which can be easily transported. They are vegetarian and being a meat-eater I am struggling to think of an easy,appetising meal I can make and deliver.

Has anyone any ideas, or recipes they can share with me?

We got given vegetable curry when our first one arrived. It was much appreciated.

what about casseroles and soups? They all reheat well.

Thanks Boogie, I hadn't thought of soup, and I've got some tried and tested recipes. I've never made a vegetable curry so wouldn't know where to start really.

You can use beans from a tin. I usually use haricot and borlotti beans.

The accidental vegetarian cookbook has a great recipe for tuscan bean stew; it takes about half an hour to make and is delicious. If you can wait a bit, I can post the recipe when I get home (is that allowed?)

Lentil moussaka - I got the recipe off here a while ago, or a sort of shepherds/cottage pie made with beas.

I made that pyjamaqueen and it was ok but very salty. I used that Bouillon stuff as stock and that was the dominant taste. Can you remember which stock you used? Shepherd's pie's agood idea but I'd need a recipe.

For lentil shepherds pie:

  1. fry onion and garlic (and carrots if you want)

  2. add lentils, tinned tomatoes, tomato puree and cook for a while.

  3. add red wine and a teaspoon of marmite (my secret ingredient) and simmer for a few minutes. You can add spinach if you want to be extra healthy. Season to taste (tip: Swiss Marigold Veggie bouillon is great instead of using salt, but the marmite is quite salty anyway.)

  4. make the mashed potato for the top with milk, butter, cheese, salt and pepper.

  5. assemble, top with grated cheese, and bake in the oven for approx 30 mins.

Voila. YUM.

Thanks very much Bessie for the recipe. Think I'll do that as it is easy to carry in the car. Do you serve it with anything? I always have peas with a meat shepherd's pie, but not sure with lentils.

Peas sounds fine. Or broccoli is nice. Any veg you have hanging around will be ok. It's nice of you to go to the trouble of doing this for your friend

I think it's one of the best things you can do for someone when they've just had a baby, along with taking their older DC to the park for a few hours!!

Bessie, just to let you know I made your shepherd's pie yesterday and it was really delicious. I ended up making the mash with a third sweet potato to normal potato. It was great and even my carnivore DH approved. So thank-you.
