Experimenting with bread baking

I'm keen to try some different bread recipes. Currently I make rolls, pizza dough, bagels.

I'd love your recommendations and recipes on types of bread to try, please. I'm keen to try focaccia but I'm not really sure where else to go.

Unfortunately I only have white bread flour at the moment (all we could get) but yesterday I ordered my first sour dough starter 😊

So far I have only done standard loaves, tolls and pizza dough. Really loving making bread and had never done it before about two months ago.

If you can get a Richard Bertinet book you will have all the recipes you want. Dough is my favourite one, but I love Crust too. I bake a lot and his recipes have never let me down.

As for ideas at home I see @GalOopNorth has a starter kit - good for you! My favorite. My top tip is bake the dough in a hot oven (240 for 35 mins then 220 for 25 mins) BUT have the dough inside a round pyrex dish with the lid on. This stops the all important steam getting out.

There’s a recipe in the book that came with my bread maker for tear and share bread, essentially white dough made to the point of proving, but before proving roll out to a flat sheet the size of a baking tray. Spread a choice of fillings on; the book uses whole grain mustard and cheddar, tapenade and chopped olives, tomato purée and pepperoni. Roll up like a Swiss roll then slice into portions then lie them with the cut sides upward on a baking sheet so they are touching each other. Allow to prove them bake til golden. They are delicious!

have you tried flat breads?

our favourite is flour, yoghurt, pinch of salt

  • mix together and leave for half an hour
  • knead well and form into fist size balls.
  • flatten the balls and brush with garlic butter
  • cook in a griddle pan on low temperature for about 5 min each side

I prove in my pressure cooker but you don't need to.

This is the other recipe I use a lot but I mix half and half while bread flour and granary. I only use 1/2 teaspoon of salt and 1/2 teaspoon of sugar and only use 2 tablespoons of oil.
