Real Balsamic Vinegar Vegetarian Recipes?

So, last year I invested in some authentic balsamic vinegar - Aceto Balsamico Tradizionale di Reggio Emilia DOP. I'm vegetarian - anyone have any tried and tested recipes for me to use? I do eat eggs and dairy and I also stretch to Parmesan.

Thanks, Ricekrispie22 - the tart looks promising! I'd probably only put a tiny bit of the vinegar on, and maybe after it had cooked, maybe with fresh basil, but it looks lovely. The real stuff cost nearly 60 Euro and comes in 100ml bottles, so is to be used sparingly :)

Apparently the Italians use balsamic much more sparingly than we do, and keep the flavour quite subtle. DP had started making salad dressing with half balsamic and half white wine vinegar (plus oil, salt and pepper) - it's really good. I also like adding a drop to tomato based pasta sauces.

Yes - at nearly 60 Euro for 100ml there is a reason for this :). The bottles we bought came with drippers. The owners of the Acetaia where we bought it suggested that it was more often added to food after cooking or on raw produce. So, in respect to the tomato tart, I'd probably put it on after cooking and I'd also add it over a salad of rocket, pear and parmesan with candied walnuts or similar - hoping for other suggestions though. Having it on strawberries does not really appeal and anyway the stuff I bought was at the cheaper end of the scale and more suited for savory foods.

Vegetarians do not eat dead animals. Parmesan is not vegetarian, so if you’re eating it neither are you. That’s absolutely fine, but calling yourself veggie when you’re not leads to problems for actual vegetarians.
