Simple chocolate sponge

I’ve made a simple chocolate sponge. At least, I hope so - its a normal sponge with hot chocolate powder added in the mix. I have toffee sauce which I have never used before.

The sponges are in two baking trays in the oven.

Can I spread the toffee sauce in the middle, the way you would with jam? Or on top?

I’m not quite sure what I am trying to create here. I see it as an experiment rather than anything that’ll have Nigella knocking on the door.

Yes you can, if it's not too liquid. Depends on the sauce. If it is too runny to spread, make some icing with butter, icing sugar and cocoa powder for the middle then drizzle toffee on top. Or use nutella/chocolate spread in the middle.

It might be very sweet if you have made it with hot chocolate powder rather than cocoa. I would wait and see how it tastes before adding the toffee sauce as it might be too sweet, but if you like that sort of thing I would just follow your heart and make something you find nice and tasty! Smile

Well the good news is they have risen. That’s a first. I used a four egg recipe which seemed a bit runny to me (but still passed the lick the bowl test)

225 flour

225 caster sugar

225 butter

And when intake the sponges out of the oven, can I put the toffee on then or wait til they’ve cooled? Basic question I know, but it’s been a long time since I baked. . Hot toffee chocolate cake sounds nice

Baking powder!

Layer of toffee in the middle as it is a bit dry and the toffee has soaked into the sponge a bit

Another layer of toffee on top and the white is a sprinkling of baking powder

Housemate looks impressed. I have eaten a slice and it’s nice - not too sweet or dry. Sponge could do with more chocolate flavour but expect if I had used cocoa that would do it?

Imagine now if I had dribbled a spoonful of warm brandy through the sponge before the toffee - that would give it some bite
