Buckwheat flour - what to make?

I received 2kg of buckwheat flour as a sub for 2kg of strong white flour for bread I had ordered via an online shop - I didn’t want to ask the already stressed delivery driver to take it back, as he was having a very rushed day.

Never used buckwheat flour, and the only recipes I seem to find with this flour used are ones for pancakes.

Anyone have any good ideas what baking/recipes this could be used for?

Here in France buckwheat flour is mostly used in Brittany to make large, thin savoury pancakes (filled with ham, eggs, cheese...)
It is gluten-free so not the best for breads.

I got buckwheat flour too, and made soda bread this morning. We didn't like it. At all. I shall follow this thread with interest!

I love galettes, but I have 2kg of the stuff, and my family will probably go on strike if I fed them galettes for the next three weeks. Grin

Thanks for the tips re bread and particularly soda bread. Will give bread making a miss!

Buckwheat flour cheese straws? Might attempt some tonight and see what happens.

I second the recommendation for galettes. My mother is from Brittany and eating galettes is one of my favourite childhood memories. You can never have too many galettes, OP. 2kg is nothing!

Made cheese straws tonight using my usual recipe, and just subbed in the buckwheat flour instead of the usual plain flour.

They are MAGNIFICENT! Slightly more crumbly than usual, but the marmite variation is good, the Stilton crumbled top version is good, the Parmesan crumbled top version is good, and the plain cheddar ones are good.

Will have cheese straws for children snacks tomorrow, and then plenty left for me with a glass of wine before galettes for supper.

Ooh, what's your usual recipe?

Pick Up Lines has some great recipes for began buckwheat pancakes, using bananas. I've also made them with pumpkin pie and they're delicious either way.

Thanks for both of those recipes - will take a look. Cheese straws have gone down very well with DH, three year old and ten month old at lunchtime. Smile

Cheese straw basic recipe: (makes loads!)
375g plain flour
225g butter (chopped up)
150g mature cheddar cheese grated
50g Parmesan or other tasty cheese
Good punch English mustard powder
Pinch of smoked paprika (can omit this)
2 medium egg yolks
4-6 tbsp cold water

Rub in flour and butter to breadcrumbs, stir in cheddar cheese, mustard powder, paprika, egg yolks. Add water slowly until you can mix to a firm dough, don’t over mix. Wrap in cling film and into fridge for 30 mins.

Roll out, cut into slices, sprinkle on the Parmesan/Stilton/goats cheese etc, pop into 190oC oven for 15 mins.

Enjoy whilst still warm if possible!!!

We make Buckwheat pancakes and have them with melted cheese in the middle, they are delicious and a hit with all the family. A bit like a Staffordshire/Derbyshire oatcake.
The recipe is :
200g Buckwheat Flour
Pinch of salt
2 eggs
600ml milk
100g melted butter

Veg oil for cooking

I cook one side in a frying pan, flip when starting to brown. Sprinkle one half with grated cheese then fold pancake in half. Ready when cheese is melted and pancake golden brown.

Aww that’s fab! Glad you enjoyed them. I started having them as I’m gluten intolerant but now my whole family request them instead of ordinary pancakes.

I have never tried, but this video is lovely.

And for the Bretons, I have a question, I make galettes with just buckwheat flour, water, and sometimes an egg. Does everyone use milk?
