Strict vegetarian coming for dinner: any ideas?

We have friends coming over on Sunday afternoon and they are staying for food.

She is a strict vegetarian, even down to veggie wine!

Now I don't eat meat, but I'm not veggie and don't really cook that much veggie stuff - well not strcit veggie meals anyway.

The others - 2 adult males, and 2 children - all eat meat.

I have no problems with ccooking both a meat based and a veggie based meal, so long as they are along similar lines. Although just one veggie meal might be easier to avoid the cross contamination thing I guess.

I need to go to Waitrose this afternoon to buy the stuff and some vegetarian wine(!)

What shall I cook? Help!!! Please

You could do stuffed portobello mushrooms (stuffed with veggie cheese, onion, breadcrumbs, parsley and the finely chopped stalks off the mushooms etc) and couscous or wild rice, or a side salad and nice bread?

Don't forget how nice a freshly made pasta sauce can be, you could make it an italian meal and have some of that tear and share garlic and rosemary bread etc

Oh well if it's really informal why not just bake a load of potatoes for an hour or so, and have a big bowl of salad, veggie cheese, beans or veggie chilli, coleslaw or potato salad (check they're veggie though) tuna or prawn mayo for the meat eaters etc

I always think a help-yourselves jacket spud meal is the easiest when dealing with fussy eaters. Lots to choose from, and everyone likes jacket potatoes.

Could simply do stuffed peppers, and fill hers with veggie fillings- veg, veggie cheese, pine nuts etc- just serve with salads and bread

The Rose Elliot chilli is NOT spicy - I am rubbish with hot food and I promise it will not require loads of water to be available to cool burning throats!

Well for the future, when my Sis comes over (also a strict veggie) I do a variation n the jacket potato thing- big pile wraps and loads upon loads of bowls of fillings- olives salad grated carrots cheeses ham whatever seems nice, with olive oils to drizle. The kids love it too, so it works well

1 tin red kidney beans
1 TBSP oil
1 large onion, chopped
2 cloves garlic, chopped
1/2lb chopped mixed veg (carrot, peppers, celery, mushrooms)
1/2 tsp dried basil
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp chilli powder
1 tin chopped tomatoes
2 TBSP tomato puree
2 oz bulgar wheat
1 - 1 1/2 pts vegetable stock
juice of 1/2 lemon
salt and pepper to taste

heat oil in large heavy-based non stick pan. Gently fry onions and garlic. Add the chopped veg, beans, basil and spices, Stir well and cook for 5 mins. Add tomatoes, puree, wheat and 1 pint of stock. Bring to boil, cover and simmer for 30 minutes. Then add lemon juice and salt and pepper (and remaining stock if necessary). Cook for a further 20 minutes

We had a crowd round at Christmas time, I did a load of jacket potatoes, a big bowl of baked beans, loads of veggie sausages, salad, grated cheese, bread rolls, coleslaw and so on.

Went down a treat.

Hmmm, no wine required. According to DH, who spoke recieved email from friend's DH - she is not drinking at the moment, nor eating soft cheeses Now, I wonder why that might be?!

I'm a "strict" veggi (gosh that makes me sound like lots of fun to be with) and when I cook for myself and my meat eating friends and fam, I often do a big veggi dish as a main thing, like a lasagne or a pasta bake or oooh moussaka, yum, and then do some complimentary meat thing as a side eg a roast bird or some poncy italian sausage or something. Turn the meal around, sort of.

Parmesan isn't veggi but all big supermarkets sell a similar hard cheese that is veggi and does the same thing. Irritatingly expensive though.
