Lunch ideas using various veg that aren’t soup?

Trying to have at least one meal a day with loads of veg in but if I serve sop once more I think the kids will break lockdown and leave home!

I have no eggs so can’t be frittata and I’ve already made pasta sauce and dhal with veg.

It’s not really stir fry suitable veg

I’ve got
Carrots
Cauliflower
Broccoli
Celery
Spinach
Kale

Rest of family are total carnivores and cheese/pasta lovers do tings like veg crumble are usually met with distain.

Any ideas?

Wraps? Pitta bread? We made little fritter things which went down well - lots of veg grated but I think I used an egg to bind it. Veggie burgers too, all whizzed up with a tin of beans and cooked in the oven.

Cauliflower/Broccoli and cheese (side)
Carrots/celery sticks and hummus (with lunch)
Spinach and kale can be put in a Greek style orzo dish that also has chopped tomatoes and topped with crumbled feta.

Here is the Greek disk called Giouvetsi
We usually cook the lamb on the side because some of us are vegetarians. Then the lamb becomes an optional topping like the crumbled feta. This is basic recipe. I’ll usually add a bag of spinach and a bit of kale while it’s simmering and stir them in.

Roasted broccoli cauliflower and kale. With garlic and / or various herbs and spices. There are loads of recipes online.

Cauliflower and spinach can be made into lovely curries

Roast the broccoli and carrots - sprinkled with spice or herbs of choice.

Broccoli can also be used in pasta - fry with olive oil, garlic and chilli. Add a tablespoon of tomato puree - cook through and then dash in a good amount of double cream. Stir through the pasta and add parmesan. It is one of my favourite quick meals.

Cauli and broccoli cut into florets and baked on the oven in a cheese sauce. Amazing.

Try Kale chips too. Great as a snack or sprinkled on top of any dish. Crunchy salty wonderfulness.

You can coat the florettes of broccoli and cauliflower in egg (or a plant milk based batter if you want to veganise it) and seasoned bread crumbs (I use salt, pepper, smoked paprika, and garlic granules) and bake it in the oven with a bit of oil until it turns crispy. About 15/20 minutes. Serve with a nice dipping sauce - garlic mayo works well.

You can also bake kale and make crisps. You have to thoroughly dry each leaf and then rub olive oil into it. Cook in the oven for about 5 minutes but check often because it doesn't take much for them to burn and go very bitter. Cook them without seasoning and then sprinkle with salt after their ready.

Also you could totally do a stir fry with that veg. No it isn't traditional, but I always stir fry left over veg that I can't think what to do with and it's always fine. Don't forget you can't also eat the leaves and stalk of the cauli and broc. Cut the stalk into matchsticks and chop the leaves to size and just stir fry them along with the rest. They're also nice roasted and added to a cauliflower cheese.

Cauliflower & broccoli cheese

Quiche using a white or cheese sauce, add cooked cauliflower, broccoli, carrots etc, fill pastry case and bake until pastry cooked & sauce bubbling.

Vegetable pasties.

Vegetable stew with added beans and or pasta.

Celery and carrot layered cheese bake, could add pasta to this.

Veg bake with cheese sauce.

Roasted veg with bread and/or salad leaves.

Mixed veg curry or chilli.

Steam the veg and add to omelette or quiche.

Veg pie with mash topping. Mash can be potato or mixture of veg such as parsnip, carrots, squash, pumpkin, swede etc.

Or a proper veg pie with pastry.

Like which is pasta and cheesy sauces then go with that. Chop up really small. Maybe even blend some into the cheese sauce. Add in bits of sausage or chicken to make it more appealing

cheese/pasta lovers

Cross a mac&cheese with cauli cheese - but include any veg which is nice with cheese sauce esp the broccoli. I do something like that, I'd include chunks of carrot too. If you can get leeks, they're good in this. A layer of spinach on the bottom might work. I've had excess onions in my veg box so sometimes make cheese and onion sauce (some celery might go in this ) - sauté the onions in the butter or oil you'd use to make the sauce, then mix in the flour and gradually add the milk, stirring constantly.
