Banana Bread - no baking powder

whatnow40 · 15/04/2020 14:22

I'm not a baker. I don't have a store cupboard as such. But I have quite a few over ripe bananas. Can I make banana bread without baking powder? I have all the other ingredients. TIA

I’ve done before
Not great

Assuming the recipe is for plain flour, with baking powder, have you got any self-raising flour?

whatnow40 · 15/04/2020 14:58

The recipe is for self raising flour. Will that be enough?

The recipe I use has self raising and no need for baking powder.

TheWildRumpyPumpus · 15/04/2020 15:01

I’ve just put one in with self-raising instead of plain and baking powder. It seems to be rising nicely so far!

Confused866 · 15/04/2020 15:01

I use the Jamie Oliver recipe - self raising flour, butter, eggs and bananas of course. No baking powder needed!

ZoeandChandon · 15/04/2020 15:02

I bake banana bread often. I use self raising flour and have never added baking powder.

The one I use is

Self raising flour should be enough. However, if you whip the egg whites separately and fold them in, you will get a lighter banana bread.

Thisismytimetoshine · 15/04/2020 15:02

You don't use baking powder and self-raising flour, it's already got a raising agent in it.

Bluebooby · 15/04/2020 15:02

If you have self raising flour use that. No need for baking powder

whatnow40 · 15/04/2020 15:52

Excellent thank you all!

Just FYI if you need baking powder and you can’t source self rising flour or baking powder you can make your own baking powder with bicarbonate of soda and cream of tartar (and if I’m not mistaken you might also be able to sub the cream of tartar with some other acid like lemon juice). The proportions are available online.

Help! I'm no baker but want to bake this for DS birthday.
Can I use normal sugar instead of Caster Sugar?

Fingermoose · 17/04/2020 10:24

@middleager yep you'll be fine with whatever sugar you have.

middleager · 17/04/2020 10:37

Thanks - I don't have any baking parchment either. Should I just grease the tin?

Fingermoose · 17/04/2020 11:04

I use a silicone loaf tin so I don't grease or line it at all Blush

Have you got a loose bottomed cake tin? You could grease that and use it instead of a loaf tin - might be easiest to get out.

middleager · 17/04/2020 13:40

Thanks - I can confim that the loaf has been baked and consumed by the family.

I greased the tin with a spray oil and it was fine.

My oven is a bit crap though so it was on for best part of 2 hrs!

middleager · 17/04/2020 13:41

It was a hit by the way Grin

Excellent Grin

Self raising flour and no baking powder here. Never a problem. I use a really simple recipe, dependent on size and no if bananas. 8oz bitter and sugar well whisked until very white and fluffy, 4 eggs and about 10oz sr flour ( add gradually plus more more if batter runny). Always fine and good cake.
