What should I make with a marrow?!

I'm thinking chutney but I'd rather try something new and interesting!! Does anyone have any suggestions? tia!

Chorizo, pepper and couscous stuffed marrow
1 large marrow, peeled
100g/3oz couscous
1 lemon, juice only
2 tbsp olive oil
1 red onion, finely sliced
100g/3oz chorizo, cut into small chunks
1 roasted red pepper, finely sliced
2 vine ripened tomatoes, seeded and chopped
1 tbsp parsley, roughly chopped
1 tbsp mint, roughly chopped
1 tbsp coriander, roughly chopped
salt and freshly ground black pepper

Rosemary roasted marrow
1 marrow, peeled, seeded and cut into large wedges
2 tbsp olive oil
2 stems rosemary, roughly chopped
2 cloves garlic, thickly sliced
20g/1oz grated parmesan
salt and freshly ground black pepper

  1. Oven 200C.
  2. For the chorizo, pepper and couscous stuffed marrrow, slice the marrow lengthways and scoop out all the seeds, then place on a roasting tray.
  3. Place the couscous in a bowl along with the lemon juice and enough boiling water to cover.
  4. Cover with cling film and allow to soak for five minutes.
  5. Meanwhile, heat a frying pan until hot then add the olive oil. Add the red onion and stir-fry for 3-4 minutes until just softened. Add the chorizo and fry for a further two minutes until just crisped and the juices are released. Add to the couscous, along with the pepper, tomatoes and herbs.
  6. Mix well and season to taste with salt and black pepper. Spoon into the centre of the two marrow halves.
  7. Place in the oven for 20 minutes and cook until piping hot and the marrow is just tender.
  8. To check if the marrow is done, place the tip of a knife into the side, if it offers just a little resistance it is done.
  9. For the rosemary roasted marrow, turn the oven down to 180C/360F/Gas Mark 4.
  10. Place the marrow, oil, rosemary and garlic into a bowl and toss to combine.
  11. Place on a roasting tray in the oven for 20-25 minutes, until golden and meltingly tender. Remove from the oven and toss with the parmesan.
  12. Season with a little salt and plenty of black pepper. Serve as an accompaniment to the Chorizo, pepper and couscous stuffed marrow.

I have made stuffed marrow before .. twice .. both times the stuffing was nice, the marrow was bitter

Hi, I have an easy marrow cake recipe if you'd like it? One large marrow makes 3 freezable loaves and you honestly would not know the cakes were made of marrow! Let me know and I'll type it out and add to the thread.

twiglett - yes it's from the local veg box scheme! I also have 2 monsters in the veg patch!
would love the marrow cake recipe!
I really dislike marrow as a rule but thought I'd give it one last try before I give it up!!

Oo, had this for tea tonight!!!

Sliced, pips out, on a baking sheet with a drizzle of olive oil and some salt and pepper, slowly roasted.

Still tasted like baked string.

Right, here goes:

Sweet Marrow Bread
(From Simple Home Baking, Carol Pastor)

I use this recipe every time a marrow turns up in my veg box! It lasts up to 1 week in airtight tin and freezes well. Recipe makes 3 breads. If you don't have enough marrow, you can 'top up' with grated carrot.

200ml olive oil
450g soft brown sugar
3 large eggs
3 tsps vanilla extract
1tbsp black treacle/golden syrup
650g grated marrow flesh
350g raisins & sultanas
115g slivered almonds (optional)
500g self-raising flour, sieved
1 tsp salt
1 tbsp allspice

Preheat oven to 150C. Butter & line 3 x 2-lb loaf tins. In food processer beat together the olive oil & sugar and slowly add eggs, beating well till it looks like batter.
Beat in vanilla extract, treacle/syrup and the grated marrow, then stir in dried fruit & almonds. Lightly fold in flour, salt and allspice, then divide mixture between tins.

Bake for 1 hr & 45 mins. Leave to cool in tins for 10 mins before turning onto wire cooling racks. Wrap in plastic freezer bags to freeze!

Chop it into big chunks, de-seeded & roast it around a chicken or joint of beef. It absorbs the meat flavours & goes meltingly soft - very different to roasting it on its own IMO.

I chopped it into chunks, mixed with chopped rosemary, garlic, 1 onion. Roasted for 30 mins. Then mixed with spaghetti & plenty of parmesan. It was actually very nice although I did think some mushrooms would have worked too or maybe some cherry toms.
