I seem to have three tins of chickpeas. Any idea how I can turn them into a vegetarian main course that isn't a curry, please?

Maybe a tagine?
What else?

Mix chickpeas with couscous, quinoa, bulghur wheat, etc. I know you said main course ideas, but they work very well with carbs/sides. You can also roast them drained with spices and a bit of oil.

Thanks all.

Chorizo isn't vegetarian! Grin

I like the idea of chickpea burgers. Also liking the idea of vegan meringue.

Catmg - your idea sounds good. I've never done roasted chickpeas, but always meant to try.

simmer for 20 minutes on a low light with fried onions, spinach (fresh or frozen) and a healthy dose of curry powder

lastqueenofscotland · 13/04/2020 16:28

There is a recipe for chickpea koftas on the Jamie Oliver website which is lovely

They are lovely in salads with roasted Mediterranean veg too.

weebarra · 13/04/2020 16:38

Sorry Remus, completely missed that you wanted veggie!

BuffaloCauliflower · 13/04/2020 16:46

I fucking love chickpeas, they’re one of my favourite foods.

You’ve had lots of normal suggestions, if you want something a bit rogue I make essentially a chickpea rissoto but with the chickpeas instead of rice.

Chickpeas, herbs, whatever veggies you fancy (leeks and peas and asparagus are nice) cooked with stock and something creamy (cream, cream cheese, whatever’s in the fridge) maybe pesto and lemon, all into a creamy sort of risotto. You want to keep some integrity to the chickpeas, not mush. Just nicely softened. Some nice fried mushrooms or roasted veg on top. This is a make it up as you go along dish.

BuffaloCauliflower · 13/04/2020 16:49

Roasted chickpeas are also excellent. I do them mostly with paprika. In a sweet potato with guacamole is yum

AdaColeman · 13/04/2020 17:00

Make a soup, potatoes leeks carrots whatever you've got plus the chickpeas, eat with lots of bread, substantial enough to make a main course.

RemusLupinsBiggestGroupie · 13/04/2020 17:09

Love the idea of chickpeas with integrity. Grin

A soup would work - I've got carrots, onions, white wine, herbs.

Thanks again, everyone.

Place marking I just got tinned chickpeas for the first time and I can’t do spicy food and don’t want to make humous so nearly posted a similar thread myself

Ok to roast tinned ones?

justaweeone · 13/04/2020 17:34

I missed the veggie bit as wellBlush
I love a bloody chickpeaGrin

AdaColeman · 13/04/2020 17:45

If you made soup, you could add rice, any beans, soup pasta to make it more substantial.

BuffaloCauliflower · 13/04/2020 17:50

@Graphista yes perfect to roast tinned ones

Sgtmajormummy · 13/04/2020 18:09

I love Italian Pasta e Ceci. It’s good for using up small amounts of leftover pasta.

Drain chickpeas.
Use a stick blender and fresh water to whizz up half into a cream.
Add enough water to cook the pasta you’ve chosen.
Put in a sprig of fresh or a pinch of dried rosemary.
Add peeled garlic to the water.
Crush up your pasta and add to the pot. They need to be similar cooking times. Or ditali.
Boil up for the expected time.
Fish out your garlic and rosemary stalk.
Serve with olive oil and loads of black pepper.
Grated cheese if you like.

And use only one garlic cloves too!

pontiouspilates · 13/04/2020 22:20

Jack Monroe's roasted carrot and chickpea soup is delicious and hearty enough to have as a main course with a hunk of good bread.

YetAnotherSpartacus · 14/04/2020 11:25

SallyWD · 14/04/2020 11:31

I do a nice salad with couscous (or another grain like rice or bulgar wheat) , roasted veg, halloumi and chickpeas.

RemusLupinsBiggestGroupie · 14/04/2020 16:14

Thanks, all.

I love warm salads. Love cous cous too, but nobody else here will eat it, annoyingly.

I had a lot of carrots in a veg box and I’m not really keen on them (too sweet) so I googled and found this recipe:

www.onceuponachef.com/recipes/moroccan-carrot-chickpea-salad-citrus-mint-almonds.html

It’s really tasty keeps well for a few days.

I liked it so much I ordered more carrots this week.
