Can I substitute something for an egg?!

It's my daughter's birthday tomorrow and I'm baking a cake tonight. I've just realised I only have 2 eggs and I need 3. I'm using a packet mix (don't judge). I don't want to go to the shops as I don't feel this qualifies as an essential shop. Can I substitute something for it? Butter? Baking powder? Help!

use 60g of plain yogurt as a substitute for one egg if you have it

You'll need something wet, eggs bind the mixture together. A splash of milk or a spoonful of oil will do the same.

I made eggless pancakes this morning, as forgot to check the shops had any before promising the children. I would guess if you can only use what you have in the house adding a bit more flour, a bit more baking powder and a bit more milk probably wouldn't do any harm (as a guess from what was in eggless pancake recipe). If you haven't got any of those I'd just make 2/3 of the mix, with the 2 eggs and divide any other ingredients by 2/3. Cook for slightly less time to account for being smaller.

I’ve used flaxseed before and it was perfect. Here’s a chart with loads os egg substitutes.

I'd just add a tbsp of some light tasting vegetable oil. I know some replace eggs for apple purée/sauce - I might have read that in a vegan cookbook?
No judgement on the packet mix whatsoever ( I use them all the time and make no apologies - not all of us are gifted with the baking gene)

Mashed banana, apple puree or some of the liquid from a can of chickpeas would be my suggestions.
Or, just use 2/3 of everything!

There was an article in The Guardian or The Observer the other day going through all sorts of recipes for cakes without eggs, fat, flour, sugar etc. Useful.

Just add a little more moisture eg milk or fruit puree.

Oil, look up vegan cakes. It doesn't have to be vegan but it will show you the quantities you need.
