what can I do with leftover cooked basmati rice?

I never seem to get the quantity right, so this time I have a bowl full left. Any suggestions?

bung it out - it's not very safe unless it is cooled extremely quickly

yes cook it quick or chuck it - there is some toxin/bacteria that grows on rice that has been cooked and doesn't get killed by heating

freeze it and use it later.
or chuck it into a stew-y type thing.

but bacteria will only thrive if the rice is left in a nice warmish environment.
if you have refrigerated it it will be fine.

last night I made a casserole of leftover rice (3 days old and we didn't get sick...never thought left rice was bad) with leftover chicken. Sweated an onion and some celery in butter and made a white sauce. Seasoned with salt, pepper, garlic and sage. Mixed in rice and chicken, put in casserole and topped with grated cheddar, spring onions and sliced almonds. Baked until bubbly. Was a big hit!

When my kids got in from school last night they had rice with a cheese and tuna sauce with some very finely chopped yellow pepper sprinkled over it, and they thought it was yummy and have asked me to do it again. Success!

btw I made the cheese sauce by melting a pack of philadelphia in a non stick pan and stirring in a big handful of grated cheddar and a teaspoon of french mustard. very quick and easy and tastes gorgeous

it has spores in it that grow and multiply and is generally not good.

My parents are Sri Lankan & my mum always freezes leftover rice - or keeps it covered in the fridge for the next day - never any problems despite the bugs one hears about. I do the same - no gippy tummies. Some lovely ideas on this thread - making me hungry!

In Sri Lanka, they make a breakfast dish with left-over rice, cooked in milk and sugar till sticky, raisins added, set in a tin in the fridge until cold, cut into wedges & eaten with molasses. Very sweet but we loved it as kids.

I always refrigerate basmati rice and have been doing it for years, using it the next day or even later, and we have never ever had dodgy tummies. Good eating

I am not familiar with basmati rice? I use left over brown rice to fry with chopped cooked potatoes,eggs,small green onion bits,maybe chopped ham,maybe a little cheese
for breakfast.I use my iron skillet so the potatoes will brown.I season with tiny bit of soy sauce,pepper,garlic salt,we like it lots.
Red rice yeast is in capsules is being to lower cholestrol, I am trying it.The yeast part should be in mold on the rice???
