I have coconut oil, turkey, squash, natural yoghurt, various spices... any ideas for how I can turn it all into a lovely curry, pls?

If you have onions, chilli, garlic and ginger blend and spices, ( I use cumin, coriander seed, paprika, turmeric and fenugreek) , and you have a curry paste, add some to a couple of spoons of natural yogurt. Use this to marinade turkey for an hour or so. Meanwhile try the remainder in some coconut oil, then add turkey and diced squash, a squirt of tomato purée, add a tin of tomatoes or passata if available otherwise just use chicken or veg stock. Cook for about an hour or longer. Just before serving add a bit more yogurt. Serve with rice, or flat bread.

Thanks so much @Justtrying! I am usually a throw-anything-in cook, but curries never work out for me. Will give this a go!

Have you got other staples like onions and tinned tomatoes? If so, finely chop the onions and fry gently in the cococut oil until softened, or if you have time, until they are reddish brown. Then add your spices - ground coriander, ground cumin, cayenne pepper - whatever you like really, and fry with the onion to release the aroma. Chop the turkey into decent sized chunks, add to the pan and brown. Add the tinned tomatoes, tomatoe puree and squash and simmer until the squash is cooked through. If you want it creamy, then add the yoghurt one tablespoon at a time (otherwise it can split) until you get the consistency you want and then cook for a further 10 mins, without the lid off if you need to reduce the amount of sauce.

Just wanted to say thanks both - I sort of did a hybrid of both your recipes and it was delicious! Smile
