Gram Flour

So, I bought this in the supermarket as it was the only flour I could get my hands on. I though, surely I must be able to make some kind of bread-ish thing out of it, but now I'm not so sure!

Any ideas / recipes anyone?

Not too sure about 'bready' things, as I think the gluten content is different to wheat flour. I love the nutty, flavour though. I do the following with it:

  • onion bhajis
  • corn fritters
  • savoury crepes
  • Mix with spices and use a batter for fish, chicken etc

Lots of recipes online, mostly Indian. It's sometimes called chickpea flour so Google that as well as gram flour.

I don't think chapatis use gram flour.

Onion banjos, pakoras, pancakes with chillis and spices.

These fritters sound nice.

Chickpea flour and gram flour aren’t quite the same thing and aren’t interchangeable tho

There’s something called Besan ka Chilla / Pudla - Google the Tarla Dalal recipe. It’s the vegan version of an omelette. Taste pretty good if you had finely chopped ginger / garlic / onion.

Dal Dhokli is a type of pasta eaten with dal. Veg Recipes of India have a good recipe. Any left over dough can be rolled out and gently cooked on a frying pan into rotis.

Another thing you can make is Kadhi which is yoghurt soup. You can literally add anything to this from chicken to rice to make this an amazingly comforting food.

Thanks again. Yeah, when I googled I couldn't see any chepatti recipe. I'm guessing the lack of gluten makes it nothing like flour other than the name!

Socca which is a sort of pancake from South of France. I50g flour, 220ml water, 1tbsp olive oil plus salt. Leave to stand for two hours, fry pancakes in oil. Have with pasta sauce, ratatouille, cheese, ham etc.

@softblocks thanks! I found a recipe for Socca but it said to broil them. Confused I don't really know what broiling is.... but frying like a pancake I can do!

Came here to suggest socca. "Broil" is the US word for grilling (as in putting under the super hot electric element in the top of the cooker / oven).

I also have made a lovely pizza with chickpea flour / besan flour. (I've always used it interchangeably). I don't have my recipe at hand, but it uses yeast

Maybe it would be more accurate to say ‘not always interchangeable’, della? Have to admit to limited experience myself, I was going by the posted article as I wanted to make pancakes from a recipe that said chickpea flour, and I had gram. Needed to add more flour to get the right consistency but it worked apart from that.

@AwkwardSquad I'm sure that's right! I also probably have just added more flour to thicken a dough or batter without thinking about it much. I find this is often necessary with gluten free baking (which I do a lot of), so it's just second nature at this point!

YES to the pancake thing- it's served all over the world and is called all different things. Really good with rosemary chopped up in the batter.
Definitely let it sit for a food while before cooking though.

I also bought chickpea flour the last week, when there was no bread, pasta, wheat flours!
