Stilton - two weeks past use by date

This may be a stupid question but..

Stilton, still sealed and has been kept in the fridge.

It has a Use By date of 14th March (not best before)

Would you use it anyway? I’m thinking yes...?

I would. I'd cut off any really dodgy looking bits, but if I'd bought it from a cheesemonger it wouldn't have had a use by date on it so I'd have just gone by how it looks/smells (but trickier with Stilton Grin).
Maybe cook with it?

I have used old Stilton in soups etc many times. It does lose its flavour. Becomes bitter

If it was curry, I’d cut those bits off and eat the rest - perhaps in a cooked dish if you’re worried.

I'd have just gone by how it looks/smells (but trickier with Stilton grin).

That’s why I’m hesitating a little.. it’s not easy to see if it’s mouldy or tell whether it smells odd 😂😂

I think I’ll take a small bite and see if it’s bitter, then will use it in some cooking... I have a broccoli stalk to use and have found what looks like a lovely recipe for Blue cheese, leek and mushroom pasta bake.

I will report back!

Cheeses that are still sealed in their plastic often last past the use-by date, whereas if they are opened, they don't.

If it doesn't feel slimy, doesn't have a sour/off smell, and isnt covered in blue/green veins more than it should, I'd give it a nibble. Your nose and taste buds are usually a very good judge. Use cooked if you are concerned, or just throw.

As a side note, we freeze stilton, parmesan and other hard cheese. They come out a little more crumbly, but very handy for stilton/broccoli soup, pies, tarts, on pasta etc etc.

Oh I was just coming on to say the opposite; that it's better kept out of plastic and wrapped in waxed or kitchen paper and stored in a cool place but not necessarily the fridge. Plastic wrapped cheeses can become quite sweaty I think? Think the same as everyone else though about eating it; it'll be fine with a bit of judicious trimming!

It was a bit sweaty.

Too late now... I’m a bowl in. 😂😂😂

It got lobbed in at the end and melted a bit, not cooked.

I’ll let you know if I’m still feeling ok later on!

The most disappointing thing is that the soup is full of stringy bits, presumably from the broccoli stalks I used.

Still tastes good tho!

I’ve eaten a lot older and I’m hale and hearty! I’m also hoping it’s had a positive effect on my immune system.
