Any suggestions gratefully received - what can I do with chicken thighs?

Please. DH picked them upt he other day in the supermarkett when I sent him to get breast fillets. Other than roasting them I can't think what to do with them!

I like Tuscany chicken

Cut slashes in the skinned breasts.

Mix together Olive Oil, Garlic, chopped basil & thyme plus lemon juice then pour over the chicken.

Cover & Cook in the centre of an 200 degree oven for 35 minutes, take off the cover and cook for further 10 minutes.

Lovely with a salad & jacket spud.

casserole them. Lots of veg-parsnips, carrots onions cut into big chunks and chicken stock/wine or both and slow cook for a couple of hours

Bake them in the oven with olive oil, lemon and fresh basil (plus glass of white wine poured over them near the end). Is is Nigel recipe and a favourite in this house.
In fact Nigel has loads of recipes for chicken thighs rather than chicken fillets.

It's not chicken thighs that I personally have - elephant thighs would be a better description

The saucy minx Nigella used chicken thighs on her show last night to cook green chicken curry.

If you want the recipe let me know and I will post it here. That's if you can be bothered to cut the meat off the bones as the recipe says.

i do whatever would do with breast. skin and bone them of cousre.

are having them tonight actually, nigel slater's suggestion of yog, harissa and mint.

From popsycal in 2004, which I have repeated many, many times :

Roast chicken with lemon and basil meant to serve 2 6 chicken thighs olive oil 2 clove of garlic a lemon handful of fresh basil 2 glasses of white wine (one to drink while it is all in the oven LOL!!) put chicken in roastign tin por olive oil over to moisten them and make a shallow pool squash garlic in its skin and stick it in roasting tin squeeze lemon over chicken then put empty lemon shells in roasting tin roast for 30 mins in preheated oven of 200 degrees gas mark 6 tear up basil leaves and shove in roasting tin after the 30 mins stick bacck in oven for 10 more mins take out of oven pour wine over chicken (you should have drunk first glass by now!!) put roasting tin on hot flame (yes really) ad let wine bubble for a minute eat nice with chunky bread to mop up juices also do it without the wine bit from ds! there easy! Popsyxxx

I put in more than two cloves of garlic and only put in the basil if I have it (which makes it really easy, as you just leave it in the over for 40 minutes. I serve it with rice - nice with the tasty sauce.

I particualry like the fact that the recipe calls for two glasses of wine, only one of which is used with the chicke.

BTW - don't cover the tin (I use a le creuset frying pan, which can then go n the hob afterwards) while it is in the oven: dh "helpfully" did so once when I left everything ready for him to put in the oven (large quantity, so in a bigger le Creuset pan) and the chicken stewed instead of roasted
