Please help me with my sausagemeat!

We're currently in isolation and don't have much food knocking about.

I've found a packet of sausagemeat in the freezer and was wondering what I could do to stretch it out a bit further. I've never used it before so don't know what I'm doing here (I bought it to make stuffing for Christmas and then forgot about it).

I've got some lentils and also a can of blackbeans and I was wondering about mashing them all up together and making a sort of meat loaf thing. I don't know if I should just make meatballs though rather than risking creating something inedible.

Any ideas would be gratefully received!

My mother used to make a sort of giant sausage roll, but you could make normal sized ones.

I put stuffing mix in mine and make big old stuffing balls as the ‘roast meat’ but of a roast dinner sometimes. DC love it.

If you’ve got eggs and bread you could make scotch eggs.

I would go for a 'meat as condiment' approach and use it as a flavourful component of a few meals.

Examples:
minestrone with sausage mixed in

a creamy pasta sauce with spinach, biscuits and gravy (this is a very American dish)

pasta tossed with sausage and roasted butternut squash

Pizza with sausage, onions, mushrooms

You could make sausage rolls, stick some chopped apples or apple sauce with it for pork & apple. Or cheddar and chutney another nice combination. If you dont have those things you could make caramelised onions and add those for another variety.

I use it like mince. Stir fly it in a pan. Add spices if you want. Add to bolognaise, casserole, soup, etc

Jamie Oliver did a really good looking deep pan pizza in a skillet with just a bit of sausage meat and onion. It looked amazing. Episode 4 on channel 4. I break up a couple of sausages in a pan and then use it as a basis for a sauce with a bit of cartoned cream and lemon. You can also do a bit of sausage meat with tomato sauce to make a kind of sausage ragu sauce.

I was just about to suggest meatballs as pp's have done.

I had 4 sausages (between 3 of us) so just popped them out of their skins and mixed the meat up with some breadcrumbs (about 2 tablespoons) plus some herbs (I used oregano and basil).

Then just made mini meatballs (a bit smaller than a golf ball).

Browned them off in a pan and then added to (a precious) tin of tomatoes that I had in a pan with sweated off onion/celery and some milk (I know it sounds odd but it works - about a teacup full) plus some herbs then blizzard smooth.

Put on a very gentle summer for an hour.

It was yummy and we had enough left for DH to have a meatball and cheese sub for lunch today.

I've also done that lasagne, and can confirm it is gorgeous!

I can also recommend pasta with sausage and carrot sauce. Sounds like an odd combination, but is actually really delicious. My recipe is very similar to this one, except I don't use either celery or balsamic vinegar.
