Puy lentils as main ingredient

I have half a bag of Puy lentils ( other half used braised with sausages; and as a side dish to salmon )
I know I could google but would appreciate your tried and tested recipes where Puy lentils are the star. (If you can't link to specific recipes that's ok, just tell me how you've used them. I'm a decent cook but have only ever used Puy lentils as a side dish, being a family of carnivores!)

I use the MMA’s a sort of salad.
Cook with some onion, bay leaf, garlic and then while still hot dress with olive and some cider vinegar. I also use some French walnut oil, but will fully admit that this is a bit of a wankery.

You can make it a mess as k by adding bits, like roast butternut squash. Salad leaves - spinach or rocket. They are easy to grow as well. Also add blue cheese. Or feta cheese, or goats cheese.
Can top with a poached egg, or not. Also some pumpkin seeds or walnuts, especially if I’ve used the walnut oil.

Lentils, roasted veg and a dollop of pesto. Grated cheese on top, very yummy.

Cottage pie - cook them up with veg, stock, tinned toms, then mash over the top and bake.

Colleague of mine likes them cooked and added to Yorkshire pudding batter in dollops like a rustic toad in the hole. Not tried it myself.
They're nice cooked and cold with chopped up salad, you can substitute jarred veg if you don't have fresh - peppers, aubergine, sun dried tomatoes and such like.

If you have left overs from something else they go really well with strong flavoured fish like mackerel, salmon fillets or tuna.

Chili is one I like (just add kidney beans, chopped peppers tinned tomatoes (I usually still use an oxo cube for flavour too)

Lentil curry also great with boiled eggs and rice. Usually use half green half red lentils for that

I'm an omnivore with veggie/ vegan kids and use them in anything I would have put minced beef in. They are much nicer than Quorn mince in chillies etc

I add cubes of feta and make a dressing with olive oil, lemon juice and fresh thyme leaves. It’s lovely.

This is delicious

Roast aubergine with Imjadra
Quarter 2 medium aubergines lengthways and score criss-cross along the cut sides. Place in a roasting tin with red onion wedges. Crush 1tsp cumin seeds, 1-2 garlic cloves and 1 tsp black peppercorns. Mix these with ½ tsp turmeric, ½ tsp chilli (mild-med heat), 1 tbsp tomato puree, and 2 tbsp olive oil. Brush this mixture liberally over the aubergines and onion and sprinkle with a few sea salt flakes. Bake at 200C for 20 mins, until slightly charred.
Using 300g small tomatoes; cut a cross in each tomato, add these to the roasting tin and brush them with oil from the base of the pan. Bake for a further 10 mins, until the aubergines are tender.

Imjadra: cook 100g puy lentils with 740ml veg stock and 1tbsp tomato puree; about 20 mins. Add 100g bulghar wheat and the grated rind and juice of 1 lemon. Season, cover and simmer for a further 10 mins, adding more water if needed. Stir in 4 tbsp chopped fresh mint just before serving.

Serve with Little Gem lettuce wedges.

Cook the lentils with onions and a little oil, garlic if you like it, and have instead of meat.
Make a broth with lots of vegetables as a meat-free meal.
Lentil shepherds cottage pie.
