Hi all,

Has anyone got any tried and tested recipes for mulled wine.

I would really like to give it a go before christmas, I usually buy a bottle of it for christmas eve for drink whilst wrapping pressies, but this year would like to make it from scratch.

Thanks

ohhhh we usually buy the sachets in the spice/herbs aisle at Tescos and add other bits like oranges and cin sticks
Sounds like too much work to make your own!

We spike a couple of oranges or tangerines with cloves, then add another ornage worth of orange peel into the pan. Add the red wine a good slug of brandy, some ground all spice, a vanilla pod and a couple of cinamon sticks. Heat very gently - do not boil or the alcohol boils off, defeating the purpose!

You can add some water if its too stong, but never normally a problem in our house!!

This would take about 2-3 bottles of wine.

We go into Brum to the german xmas market and pay for a nice big mug full

It's lovely and don't half knock me out if i have more than one

1 bottle of red wine, add half a pint of water, one cinnamon stick, about 6 cloves and 3 or 4 oz of sugar (depending on how sweet you like it, you can always add more if you want).

Gently heat until simmering. Add orange and lemon slices.

A lot of people put brandy in the mulled wine too, but we don't bother with this.

Mulled Wine

2.25 liters (about 10 1/2 cups, a 1.5 liter bottle plus a 750 ml. bottle; or 3 bottles, each 750 ml.) full-flavored red wine such as burgundy-type or Zinfandel
About 2/3 cup sugar
16 inches of cinnamon sticks in total
2 whole nutmegs, cracked in large pieces with a hammer
1 tablespoon whole star anise
1 teaspoon whole allspice
1 teaspoon whole cloves
8 quarter-size slices fresh ginger
1 large (about 1/2 lb.) Granny Smith apple, cored and thinly sliced crosswise
1 medium-size (about 1/2 lb.) orange, halved lengthwise and thinly sliced crosswise
Colored part of peel from 1 medium-size (about 1/2 lb.) orange, peeled from fruit in a long spiral

In a large pan over medium-low heat, stir wine, 2/3 cup sugar, cinnamon, nutmegs, star anise, allspice, cloves, ginger, apple, orange, and orange peel until steaming.

To blend flavors, hold mulled wine at steaming, uncovered, 15 to 20 minutes. Taste and stir in more sugar, if desired.

Ladle into mugs and serve, or reduce heat under wine to low (below simmering), and keep warm up to 2 hours. Makes 11 cups, about 14 servings, 3/4 cup each.

mothernature's spices etc look fab - would just like to add that dh (a dane) swears by boiling up spices, cloves, sugar etc for almost a day beforehand in water and then put the wine in for the final steaming... intensifies the flavours really nicely. But don't do orange this way as it can go a bit acidic.

Have fun practising Dizzylizzy

Oooooooh thanks alot for the recipes.

I think I will have to go into town this afternoon to get the ingredients.

I don't know which recipe to use so I'll have to try them all to figure out which one is best.

Thanks again.
