I'm a shit cook. Really only do a few things that I know, otherwise just not confident. Have lots of cookery books, but tbh never even open them! 😂

BUT! I do have a recipe for shortbread that is absolutely foolproof and the shortbread is delicious - melt in the mouth, not hard. So, in the spirit of sharing, and I case you get quarantined, enjoy.

Please do share any of yours, that even I could finesse.

Shortbread

250g unsalted butter, softened
250g plain flour
125g caster sugar
125g cornflour

Mix all ingredients together in a bowl until they form one ball.
Roll out to about 1” thick.
Cut into circles.
Place on baking tray, spaced evenly.
Fork the top of each round.
Oven bake - low/medium heat - for 20-30 mins (do not allow to brown).
Take out of oven, sprinkle with caster sugar.
Allow to cool.

spaghetti carbonara (makes enough for 6):

600 g spaghetti
6 chopped bacon rashers
2 tsp olive oil
180 g Philadelphia Light
2 egg yolks
black pepper

  1. mix the egg yolks and Philadelphia together. add black pepper to season.
  2. cook the pasta in Salt water (add salt to the water before you boil the pasta)
  3. whilst the pasta is boiling, cook your bacon in a pan
  4. drain the pasta, but save some of the salt water. add the pasta to the pan containing the bacon, along with the salt water you saved (only a splash)
  5. remove from the heat and add the Philadelphia mix
  6. keep mixing to coat all the pasta and make sure the egg is cooked
  7. serve

Dice mozzarella ball, tomatoes, basil and add oil and seasoning.

Throw into cooked spaghetti.

Roasted caulilflower soup:

Chop a red onion and divide cauliflower into small florets. Put on a baking tray, season and throw on a couple of garlic cloves in their skin.
Drizzle some oil over and mix everything together. Roast for about 20 mins at 220 (or a bit less if your oven runs hot), turning over a couple of times. Dont let it burn, it should just be golden and a bit toasted.

Tip the cauliflower and onion into a saucepan, slip the garlic out of its skin and add, then pour in 1 litre of vegetable stock. Simmer 20 mins. Check for seasoning, add lemon juice and grated nutmeg to taste. Blend in a blender for a lovely velvety soup.

This is easy and lovely -
Chop potatoes, carrots, onion, whatever other veg on the turn or you fancy (broccoli, beans etc).
Throw in an oven pan a dash of oil loads of seasoning (rosemary, sage, salt pepper etc) add some garlic too
Lay sausages on top 8-12 or as many as you like. Fat are best but I also use veggie.
Make gravy (I like bisto onion).
Pour oven veg
Throw in oven, check after 30 mins turn sausages, another 20-30 mins.
Gorgeous one pan meal.
Every one I've shared it with has lived it.
Kids especially!!

Good wedge of chorizo (about as tall as the chickpea tin)
Tin of chickpeas
Cherry tomatoes
S+P to season

  1. Blend chorizo and all but handful of chickpeas to paste in food processor
  2. Form into balls a bit smaller than golf ball and put in oven dish
  3. Roughly chop tomatoes
  4. Sprinkle tomatoes and remaining chickpeas over balls and season to taste
  5. Bake at 160 for about 20mins.

Do you mean 1” thick, sounds very deep!

I tend to use bbcgoodfood for inspiration, if you stick to recipes with lots of 5* ratings, it is very reliable.

MN Flapjacks:

250g porridge oats
150g butter
2 tablespoons golden syrup
1/2 can condensed milk
(I usually do double quantities to use a whole can of condensed milk)

Preheat oven to 160 degrees Celsius
Melt the butter then add the syrup and stir until it’s all mixed
Add condensed milk and boil for approx 1 minute
Turn off heat and add oats. Mix until all coated.
Put into a roasting dish - I use a reusable non stick liner.
Spread evenly but don’t push it down too hard
Bake for about 15 minutes.

Chocolate brownie bowl cake.

Just made one. 3 mins from idea to mouth.

1 egg
3 tablespoons each
Self raising flour
Vegetable oil
Sugar
1 tablespoon each cocoa and Nutella
1/2 teaspoon baking powder

Mix with fork.

Microwave 1.30 mins

Eat.

Cod with rosemary and garlic traybake

Cube potato, add olive oil and seasoning and roast in oven for 30 mins at 180.

Dot chopped tomatoes, rosemary (fresh or dried) and garlic cloves in amongst the potatoes and lay cod on top. Add splash of wine and more seasoning and roast for further 20-25 mins.

Second bbc good food - I’ve had lots of lovely recipes off there

Sausage tray bake - chop whatever veg you have lying around into big chunks (peppers, onions, courgette, cauliflower, whole cherry tomatoes, carrots - whatever really) and put in a roasting tray. Add salt, pepper, glug of oil, dried oregano. Bake for say 15 mins (so the veggies are getting a bit soft), then add a pack of sausages to the tray and back in oven till sausages cooked. Nice with some crusty bread.

Katsu sauce.

1 large onion and 2 carrots chopped
Thumb of ginger peeled and sliced
2 cloves garlic chopped
1 Tsp flour
1tbsp curry powder
1 tbsp soy sauce
1 tbsp honey/maple syrup
500ml chicken/veg stock

Add little oil to pan and sweat down the onions and carrots for 5-10 mins. Add the garlic and ginger cook for 1-2 mins. Add the flour and curry powder to brown off the spices. Slowly add the stock stirring lots to get rid of the flour lumps. Add in the honey and soy sauce. You can also throw in a few keffir lime leaves if you have them. Bring to boil and reduce to thickness. Blitz it in the blender if you like a smooth sauce.
