Saving my Christmas Cake for next year

I was poorly in the run up to Christmas, I managed to cover the Christmas cake in marzipan but it didn't get iced.

I'd like to save it for next year if possible, is that possible?

Should I freeze it or just wrap it up in foil? Leave the marzipan on?

Most online advise says 3 - 6 months in the fridge or up to a year in the freezer but I'd probably ice it and eat it now, you could do it for valentines or Easter.

Having said that, when Scott went to the antarctic he took a fruit cake from Fortnum's and they found it recently and said it was probably still edible, I wouldn't fancy it though Grin

Can't eat it unfortunately, I'm trying to shift some weight and once it's cut I won't be able to leave it alone. I'll have to try to find a good home for it.

Turn it upside down & put more whisky in it? I’d keep it and see.

If it's marzipaned all over, so sealed, it should keep fine in an airtight container.

We iced ours last Thursday and DP has eaten most of it. It's been marzipanned for a bit but it's definitely drier than most years... I'd eat it or give it away.
