Can I use large leafed spinach in recipes that use baby spinach?

Just that really. I've grown some spinach and it looks a bit like dock leaves. Will it wilt down like baby spinach or should I cook it differently?

You could always chop it up a bit!

The stalks might be a bit tough, either chop them real small, or strip them off. Try wilting one leaf and seeing how tough it is.

Yes, it will wilt down. It's only relatively recently that baby spinach has been so widely available. First time I ever cooked spinach in 1980 I washed and crammed a great bagful into a saucepan, heated it up and watched open-mouthed as it dwindled to a spoonful in a matter of moments. Grin

It's true there might be some thicker stalks that don't wilt as much, but you could strip those out before cooking if you can be bothered.
