What's the veggie equivalent of a Sunday roast?

DS1 is now strictly veggie. That's fine. We eat veggie food often anyway. But I miss a Sunday roast which fills the house with a welcoming smell, is easy to cook, has lots of left overs that people can make into their own lunches and dinner next day .

There must be a cosy, family veggie dish that is versatile in this way. What is it?

We just have everything apart from the meat, so all the potatoes, veggies, gravy etc. Sometimes have Linda McCartney sausages, veggie pie or similar but I'm not really bothered about having any meat replacements and just enjoy the rest of the Sunday roast.

Quorn do a roast replacement.
You can also go for toad in the hole with veggie sausages, veggie sausages alone, any kind of veggie "meat".
You don't have to miss out, though. If you really want a meat Sunday dinner, do it for you and any other meat eater and just let him eat the spuds (presumably cooked in a veggie friendly way), veggies, stuffing, Yorkshire etc.

I say that as I went veggie at 13- my dad refused to give up his Sunday dinner, but did cook everything he could in a vegetarian friendly way (apart from gravy- he will only accept meat gravy). I was happy to eat everything apart from the meat and make my own veggie instant gravy.

A whole celeriac roasted is a joy! Think about the sorts of things suggested as a Christmas veg centrepiece too. Lots of suggestions online.

'All the trimmings' is always good
Fresh baked bread is good for smell and warm homely feel, serve with homemade soup/stew or cheeseboard and salad, leftovers are toast and sandwiches next day.
Otherwise I like to make a lot of anything time consuming/complicated, e.g. Indian with homemade samose and parathas etc

Love some of the ideas on here - the mezze and curry feasts are perfect.

I'm a bit uneasy about having a usual roast and just giving him the trimmings. Seems like he'd not have any protein that way. But I could just cook him some veggie sausages or a nut roast to go along with the rest which is all veggie-friendly anyway.

Thank you. Loads of ideas. I'm going to try several of them over the coming weekends.
