I need a fantastic Chilli recipe please?!

We are having a mums night in and I am going to make chilli - I often use the "Jamie Oliver" version but just wondered if anyone else had any good recipes or tips?

Also how safe is it to reheat rice? I am really not keen on doing this although it will take ages to cook a whole batch!

I just use the tins of kidney beans with chilli sauce in it - and if you want it extra spicy - a packet of dried chilli mix too. Add tins of choped tomatoes and yellow or orange peppers and olive oil. it's nice with chunks of beef rather than mince - but may work out expensive if doing it for a lot of people.
as for rice - it think it would be ok to reheat - just drizzle some water into it first to stop it drying out.

I do mine with newcastle brown ale, tobasco and LOADS of tomatoe puree. the newky makes it AMAZING ooh and cook for hours makes it really caramalise

For 3 to 4 people, I fry up mince (about half a kilo) and onions with some garlic and a tablespoon of olive oil. I make a mix in a cup while they are frying of:

2 heaped teaspoons of flour
1 level teaspoon of chili powder or 3/4 of a tsp of hot chili powder
2 rounded teaspoons of cumin powder
1 oxo cube or similar
1 level tsp cocoa or heaped of hot chocolate powder
a few good grinds of pepper

Mix them all up and pour in to the fryed mince, stir up and cook for a 3 or 4 mins.

Then lob in a tin of chopped tomatoes and a tin of kidney beans (drained)

Then cook for about 45 mins to bring out the flavour of the spices

YUM

serve with tabasco in case people like it hotter.

I always put garlic in mine.
Rice is fine to reheat - you could have a pan of simmering water and put the just-cooked rice back in for 5 mins. I freeze mine in small portions, run it thyough a seive, then microwave it when I just need it for me.
I'm afraid I don't like the kidney beans with chili sauce - Lloyd Grossman does a good sauce - expensive if making a lot though

Cook with wine to make really rich, lots of garlic, use half beef, half lamb mince if you want. Make at least the day before. Serve with radishes and spring onions mixed into sour cream on top (let folk help themselves). Instead of rice can have baked potatoes or wraps. Also offer side salad with it (plenty of avocados!) - yum I'm hungry now.

What about the red wine?? Add 1/4 bottle to mince after the initial sizzle, drink the rest for flavour. Sometimes use a little pork mince as well as beef. Hungry again now!

I don't know how to cook it but love the way americans make chilli ! hope there's anAmerican arund who can provide a nice recipe (yummy! I will be checking this thread! )

but probably I have fell in love with a particular brand of canned chilli, so don't take me seriously
