Soup with leftovers

I’ve got all sorts of bits of leftover veg from Christmas, loads of potatoes, sprouts, broccoli etc. I’m not the best chef in the world but was thinking I could make some kind of soup with it? Where would I start? Any help gratefully received

I’ve got potatoes, mushrooms, parsnips and carrots and also thinking soup could be good but I’ve only ever made french onion or minestrone before? Do I just sweat them off in butter add stock and simmer? Thinking it would be pretty bland!

I'd get some leeks and make leek and potatoe soup and a separate batch of broccoli soup. Not sure about the sprouts though!

OP: sweat off onion, potatoes and broccoli stalks chopped small. When soft add stock and cook through, blitz. Meanwhile shred your sprouts finely and your broccoli tops into small pieces. 4 minutes before serving, add your delicate greens. season to taste. You can blitz at the end if you like, depending on how fine you cut the greens and if there's enough potato to keep the consistency even.
Dotty: use your potatoes, parsnips and carrot to make a smooth soup but use ham stock or fry in bacon fat and add finely chopped bacon at the end. Have your mushrooms fried in butter on toast with a sprinkle of chopped fresh parsley another time.

All soup is about the stock really, and not overcooking all the components so they lose flavour.

Likewise with leek and potato: keep the green ends (not the woody throw away bits)to add just before the end to maintain fresh greenness.
