Jamaican night!

what can i contribute to the Jamaican night in terms of a main course that's tasty and the ingredients are easy to source. It needs to be a main course but all that i have seen online so far sounds rather unappealing... please?

Please don't use Jerk seasoning alone, it tastes crap on whatever you use.

What about seasoning some pork chops without the bone in.

A little curry powder, some chile powder, tons of black pepper, tomato, onion, salt, garlic, pinch of tumeric and some sugar, wibble it around with your hands and add a little water (an inch), wibble some morejust a bit, leave to marinate in the fridge overnight and it's bloody fantastic.

Also you could soak some black eye peas, available from morrisons, cook them and add to easy cook rice after it's cooked. You will be a star.

There is plantain as well, the bananas that you fry, I could go on & on & on But I wont

a a little bit of malt vinegar to the ingredients of UCM's marinade. Excellent stuff for when you barbeque.

just realised that the 'authentic ' comment sounds rather rude - so sorry UCM. Will try peas and rice. Serve plantain as part of the meal not pud? Morrisons??? CAn get to a tesco if i have to though

Most definitely and I don't know many black people who use allspice. But that's just me.

I am sure it will taste nice but no, it wont be authentic.

2 couples doing it. Dh doing pud. Friend's dh doing starter. Friend and i doing main course. Doing our best not to get very drunk this time, unlike when we did Greece.... and Spain... and...i could go on!

Well I would stick with doing chicken thighs for all of you as a main course, so 2/3 per person. Take the skin off if you want to be authentic (and I am not black by the way) marinate overnight. Roast them normally but use the squidgy stuff to make a light gravy add granules if you need to.

Soak some black eye peas over night and cook as described. Leave aside. Make some rice, when cooked stir in the peas. This is making my mouth water as we speak.

for the Plaintain, fry and serve with the dinner.

For pudding a punch would be nice, but I ;have never made one so apple crumble would be gorgeous

When I say use the stuff from the marinade I mean boil it for a while with the granules

You don't need a lot.

lamb is used instead of goat in curried goat. i love doing ackee and salt fish, so quick. beef with black eyed peas and guiness stew goes down well.snapper looks lovely, also home made colslaw.rum and guiness punch also.

Used to be able to get saltfish from a shop in Plymouth (a very long time ago - when I knew not how to cook it......I was very upset as it wasn't what I expected)

Fried plaintain is delicious.

Rice and peas but someone will probably supply that.

What about jerry cakes (fried dumplings)?

Pea soup (mmmmm!)

Don't forget the national dish, ackee and salt fish. Instead of fish, my DM sometimes uses bacon and it is tasty.

Rum cake

Bulla cake (my favourite)

Bun and cheese.
