Lots of leftover roast potatoes, what do I do with them?

Can I just reheat them in the oven or will it be pretty awful after they've been in the fridge for a day or so?

Probably pretty awful!

I would try slicing them up and pan frying them - great with fried eggs/beans.

I know what you mean, but the lo's are only 4 and 2 so their appetite isn't huge yet. ...and there's only so many potatoes that dh and I can eat!

Agree with BIWI - Cut them into wedges, make bacon and sausages and then fry them in the left over juices on high heat (makes them crispy)! If its abit fatening add an egg to feel healthy, or omlette!

FWIW I had a left over baked spud and put it back in over when it was on, cooking something else, and that cripsed back up in about 15mins!

spanish omelette would be great and not so unhealthy. I make this and hate having to cook the potatoes specially.

Do that - is great hot or cold.

LOL, at the speed with which Royal Mail deliver these days they'd be completely green with mould by the time they get to you!
