Roast potato stress!!

Has anyone ever done the Jamie Oliver roast potatoes where you par-boil, dress in goose fat and then cover and fridge overnight to roast the next day? I want to get ahead with the prep for tomorrow but am worried about them going black.

They shouldn't go black if you parboil them.

I was thinking of doing this, but I thought part of the point of really good roast potatoes is getting the fat really hot before you add the potatoes, rather than putting the goose fat on before?

Can you just parboil potatoes and keep them in the fridge though?

@PeterRouseTheFleshofMankind I think it's actually to do with there being no moisture in the potatoes which if they've fully cooled there won't be.

Peel, Parboil and throw back in the pot on low heat to dry out a bit. Give them a shake with the lid on to toughen up the edges. You can add hot fat today, put them on the baking tray and cover with foil until tomorrow. We do this all the time. Ready to rock. Parboil parsnips also nothing goes brown once it's been parboiled. I've made carrot parsnip mash, and sweet roasted carrots and parsnips. They're in a lasagne tub with a couple of knobs of butter, easy to throw in the oven to reheat. Do as much as you can today to take the stress off tomorrow

Im tempted to do this too but nervous.
I don't have a Tupperware big enough for my mountain of spuds but do have a large Pyrex dish with a lid. Do you think they would be ok in the fridge on a Pyrex lidded dish??

Perfect. I cool mine on a plate in the microwave, then put un a tub once cool. The lid can make them sweat.. Its all about keeping moisture out. Just do it 😁

If I parboil potatoes, parsnips etc do I then need to keep in the fridge until tomorrow? Or can I just drain and keep in the pan at room temp?

Or can I peel stuff and keep it in water until tomorrow? And parboil then?

Depends how cold your kitchen is. I'm sure it's not warm enough to make them go off. You can parboil today and keep in fridge or even bag up and keep out the back of your house. I've no room in my fridge so I've mine out the back 😂

Not true that they don’t go black if you par boil...once discovered to my horror! Don’t know why it happened though. But I agree let your potatoes go as cold as you can before putting them into hot fat . Also make sure they are roughed up. And turn them only once.Plenty of sea salt and if you can stick some rosemary in whilst they are roasting....yum

Mine are par boiled, roughed up, filly steamed dry and cold, tiny bit of oil on them and in lock & lock tubs in the frigo.
