Easy freeze pasta sauce

Morning all!
I’m looking for an easy pasta sauce with plenty of hidden veg that I can freeze please?
I currently buy the asda little kids pasta jar sauce but once opened it needs eating within a couple of days and ends up going to waste.

My kids really like the Jamie Oliver 7 veg sauce: www.jamieoliver.com/recipes/pasta-recipes/seven-veg-tomato-sauce/

If you have a food processor it takes literally minutes, you just cut off the tops of the veg and get rid of the seeds and then whizz everything up in there. And then a stick blender to blitz at the end.

It makes a lot (4L!) so perfect for batch cooking and freezing in smaller portions. You can put it on pizza, pasta, cook fish or meatballs in it, basically anything where you might use a tomato sauce.

I came to recommend that same Jamie Oliver one!!

And it's pretty versatile to swap in and out any sorry looking veg in the fridge that needs used up. I also add a good tablespoon paprika.

It adds a sweetness to the sauce. You could always add just a pinch of sugar. Or use all red peppers.

Thank you for the red pepper advice, that’s what I did! Little one loved it 😊 I halved the recipe and still can’t believe how much it makes! Plenty for in the freezer. Thank you so much for your help, glad I asked :)

Thats great! glad it went well.

You can dress it up all sorts of ways. I like it over roast veg mix, with chickpeas and veggie sausage.

oh and we used it as enchilada sauce too when my little girl saw it on CBeebies and wanted to make them. Just added cumin, chili powder and paprika.

Passata, fry/boil whatever veg, throw in blender, freeze.

I roast tomatoes and other veg (peppers, squash, onion etc). DS will eat in chunks on pasta/couscous with some cheese. DD would rather eat her own leg so for her I blitz it up, often with some cream cheese and turn it into "red pesto". The red pesto in particular freezes well and can be frozen in manageable portions. The chunky veg options I usually freeze in the form of a vegetable lasagna as veg like butternut don't retain their shape so if I turn it into a chunky sauce and use as lasagna it works well and can be frozen like that.

I also do a standard tomato pasta sauce, sometimes with bacon, in which I toss whatever veg I have lying around (mushrooms, courgettes, onions, peppers, leeks etc). We seldom have leftovers but when we do I freeze it.

Fill a roasting dish with quarters of red onion, peppers, aubergine and a few cloves of garlic. Roast for 30 minutes then blitz with a carton of passata, spinach, basil and balsamic vinegar.

I make gallons on the stuff and freeze for quick dinners for the baby and as a sauce for bolognese, lasagne, etc...

I've also used it for a chilli sauce by frying off some chilli flakes and adding a little paprika and hot sauce.
