Cheese or cheese/ham muffins? recipe please!

this is one I've found from Phil vickery.
I've not tried it yet but it looks as easy as it gets:
Cheddar Muffins
Ingredients

175g/6¼oz self-raising flour
2 tbsp chives, chopped
100g/3½oz cheddar cheese, grated
285ml/½ pint milk
pinch of salt and freshly ground black pepper

Method

  1. Preheat the oven to 220C/425F/Gas 7.
  2. Mix the flour, chives, cheese, milk and seasoning in a bowl to combine.
  3. Divide the mixture and spoon into a greased muffin tin to make approximately 12.
  4. Bake in the oven for 10-15 minutes, or until golden brown and spongy. Serve.

It depends on what sort of cook you are, I suppose, I like quick and simple

found this at recipezaar it sounds very nice so i might make some later.. my diet will never start.

cheese muffins

2 cups flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups grated cheddar cheese
1 cup plain yogurt
1/4 cup melted butter
2 eggs

In bowl stir together flour, sugar, baking powder, baking soda and salt.
In another bowl stir in cheese,yogurt, butter and eggs.
Add this mixture to dry ingriendents and stir just enough to moistened.
This batter will be stiff.
Fill greased muffin tin with batter.
Bake at 400 for 15-20 minutes.
Makes 12.

Ham and CHeese Muffins

1 3/4 cups self raising flour
1 teaspoon baking powder
1 cup grated cheese (preferrably tasty)
1/2 cup finely chopped ham
1 tablespoon of chopped parsley (if available)
1 egg, beaten
3/4 cup milk
85 g butter (melted)

Preheat oven to 200 degrees celcius.
Sift flour and baking powder into a mixing bowl.
Stir in cheese, ham and parsley.
Mix together egg, milk and melted butter and add to flour mixture.
Stir gently together with fork until ingredients are just moistened.
(Do not beat).
(Mixture will appear slightly lumpy).
Divide batter evenly between a greased 12 cup muffin tray.
Bake 20-25 minutes.
Serve warm with or without butter.

I make these ones often. They are very easy as there's no butter to faff around with.

2 cups grated tasty cheddar cheese
1.5 cups self-raising flour
1/2 tsp salt
1 Tbsp sugar
pinch cayenne pepper
1 egg
1 cup milk

Mix cheese and dry ingredients together in bowl. Whisk egg and milk together in another bowl. Add liquid ingredients to dry and mix lightly.
Spoon into medium or mini well oiled muffin tins. Optionally sprinkle a little extra grated cheese and paprika on top.

Bake at 210 degrees Celcius for about 12 minutes for medium sized muffins or 10 minutes for mini muffines, until golden brown and tops spring back when pressed.

These work best if you don't use paper liners, as they form a lovely chewy crust where they are in contact with the metal baking tin.

I've made Phil Vickery's muffins tonight. They tasted lovely, but stuck to the paper case, so we lost about a quarter of the thing! Any ideas why? And what we can do to avoid it? I did think I would maybe make them in the yorkshire pudding tin, then I wouldn't need to use cases.

I have just made Zachary Quack's in a silicon muffin tin. Got that lovely crust. They are delicious. Really cheesy. Will be doing a double batch next time.

Have you tried freezing them ZQ?
