Help - smoked salmon

I've defrosted some salmon to make a mousse with for a dinner party. THere is a brownish grey section in the middle of it - is it still ok to eat

What do you mean int he middle? of a slice or a filet?

There's often a brownish grey bit along the edge?

are slices of smoked salmon, is in the middle of the edge of the slices iyswim. I thought it was ok, but having a crisis of confidence.

Hi PanadaG, Just to let you know that the grey bits on any fish is blood from the fish, This is usualyfonud on the bottom of the fish and when you fillet the fish. Also tou will find it running down the middle of the underside of the fish. Also with any kind of smoked fish, the blood/ blood clots turn a grey colour. Hope this helps.

sorry, i forgot to say, the blood turns grey when poached, steamed, smoked etc
