Ooo, Turkish!
Meze starters, Sigara Borek, hummus, warm flatbread, Turkish cheese, bulgur wheat salad, olives, dips
Main - Turkish pizza - 'pide', or white bean stew, or stuffed aubergine
Dessert - Baklava with ice cream!

Indian is very easy to make vegetarian/vegan.

Bhajis, pakoras, samosas, poppadoms and chutneys.
Daal and a couple of curries (vegan richa has a great selection) with rice and naan.
Lemon tart and coconut ice cream for pudding.

Mexican:

Nachos with dips as a casual starter alongside drinks
Pioneer Woman burrito bowls for main (veggie version)

Easy to prep ahead

Is it non-fish too?

Middle Eastern meat-free dishes:
Vegetable tagine with couscous, grilled hummus and pomegranate
Falafel
Stuffed aubergine
Batata harra
Sometimes make a platter so people can make their own wraps and use olives or cucumber/carrot batons to divide them up:

  • Hummus with a little sumac sprinkled on top and crudités
  • Pickled beet - usually julienned
  • Mini falafel donuts
  • Spiced chickpeas
  • Boiled egg slices
  • Roasted seasonal veg - sometimes grilled, lightly fried etc.
  • Baba ganoush
  • Cucumber mint yoghurt
  • Tomato and cucumber slices

Salads:

  • Fattoush
  • Salad shirazi
  • Tabbouleh

South Asian meat-free dishes:
Vegetable baazi - usually potatoes but have also used okras before
Tadka daal
Tandoori spiced roasted veg
Saag aloo
Aloo gobi
Vegetable/prawn biryani
Plain basmati rice with peas

Platter of:

  • Vegetable koftes
  • Spring rolls - usually julienned veg
  • Samosas - either using spring roll pastry sheets or with dough - usually do both with different fillings e.g. potato and peas, and mixed veg for the other
  • Potato balls
  • Fritters

Dips:

  • Tomato salsa
  • Mint sauce
  • Cucumber raita

Indian (in particular Gujarati and Tamil) food is quite easy to make both vegan (yoghurt and butter and milk are often optional in these cuisines). But depends what people like.

Cocktail Gujarati samosas / kachoris filled with spiced green peas, with a mango and lime dipping sauce / gunpowder cocktail Idlis or dhoklas make really easy starters. Momos (Nepalese / North Indian dumplings) are really impressive starters but far more difficult to make from scratch than Chinese ones so need practice. Gujarati-Kenyan starters like fried mogo (cassava) are also good.

For mains you can make a big vegetarian hyderabadi biryani, or go Punjab / kashmiri inspired and make chilli paneer / marinated paneer steaks / spiced chickpea curry (punjabi style is the only way to go with this one - the gujarati ones can be too sweet) with bhatura (dough made in the same way as naan but either deep fried or roasted on a pan like roti instead of baked in the oven).

For dessert you could try Nimish (whipped cream with cardomam set in the fridge overnight and topped with nuts or mango puree), Thick mango lassi (laced with malibu if desired!).

Then followed by Indian ginger / cardomom chai or strong south indian style ‘cooked’ coffee, and thin crumbly Indo-Kenyan butter and coconut biscuits for afters.
