nice things to do with carrotts

DDs LOVE carrotts, but i cnat think of exciting thigns to do with them
i mostly cut into batons, and just steam or boil, add a little butter

they do love that, but i owuld like other ideas

Carrot and swede mash?

Grated carrot as part of pic n mix tea or on salad?

Grated carrot in sandwiches/bagels/pasta salad.

Make carrot ribbons with a potato peeler and courgette ribbons. Stir fry or steam and serve like pasta, or if you want to be creative (or your DDs) weave them together and wrap round a samll chicken breast/fillet of fish and bake in a foil parcel. Look pretty!

oh yes we like raw grated

they are not so keen on mash - 'tricolour' mash they like (tattie carrot and turnip)

My daughter loves carrot and coriander soup. Dice an onion, potato and carrots. Soften in some butter. Add stock and simmer until all vegetables are cooked. Add a couple of tablespoons of chopped fresh coriander, then liquidise soup. I adjust quantities of vegetable and stock according to how many I am cooking for.

my dad makes creamed carrots - it is cooked carrots in a white sauce - it is much nicer than it sounds.

yes just like creamed leeks. I serve it was a vegetable like with say sausage and mash or any meat or fish thing.

Tonight i am doing it with a chicken and some baked potatoes. It is simple and not served that much differently from boiled carrots but it is so good.

Carrot souffle

350g carrots, cooked and pureed
40g butter
25g flour
150ml water from cooking carrots
3 large eggs
25g parmesan

Melt butter, stir in flour and add the carrot liquid to make a thick sauce. Add carrot puree and season.
Beat egg whites until stiff.
Add beaten yolks to carrot mixture. Fold in the whites lightly then pour into well greased baking dish.
Sprinkle on grated cheese, bake for 40mins at 200 deg C or until set.

Jamie Oliver does a recipe that is like caremilised carrots.
All stood up in a casserole dish then baked.
Think it is in his last but one book, the huge one about teaching to cook.

I chop carrots and wrap in foil with a drop of water and some honey and roast it. The kids love them

Morrocan carrot salad. Basically cut carrots into matchsticks and blanch them. Then stir in fresh coriander, olive oil, paprika, bit of ground cumin, salt, pepper, lemon juice and let them cool. Supposedly to be eaten at room temperature but I prefer it still hot or fridge cold.

Roast them in olive oil with cumin seeds and bit of honey, orange zest and juice.

Grate carrots and onions and then make into little patties, like you would sweetcorn ones; I imagine it needs flour and maybe egg - fry. Could add spices to these too.
