You could make a nice chicken stew.
Brown off some chicken portions (breasts/thighs) in a large pot.
Remove and put aside whilst you tip in the veg and soften that for just a few mins.
Put the chicken back in the pan and pour in a glass of white wine if you have some (don't worry if you don't just go to the next step, you want to cook of the alcohol and get all the nice crusty bits from the bottom of the pan, so cook on a high heat for a couple of minutes. Then pour in enough chicken stock (made with a cube is fine) to cover the chicken and veg. Season with salt and pepper and add any herbs if you have them (parsley, thyme are good and tarragon is lovely with chicken - dried is fine).
Cook in the oven (180 degrees) or hob (on a gentle simmer) for an hour.
You can add a splash of cream if you have it.
If the sauce is a bit thin, just thicken it with a bit of flour (mix the flour - about a tablespoon - in cold water first then add a bit of the hot liquid to the flour and then add that to the pan - you'll get lumps if you try and add the flour directly into hot liquid).
You'll need to cook for a couple more mins to cook out the flour so it doesn't taste powdery.
If your feeling very ambitious you can make dumplings that you put in before you put it in the oven. You can buy packs of dumpling mix - you just add water so it's very easy.
