“What other vegetarian sandwich fillings are there, apart from egg or cheese?“

Although I must admit I do like an egg “mayo” sarnie except made with salad cream instead of mayo, yum! And I also love a good cheddar and tomato sandwich.
But...
Dirty word on here with some but quorn do a great range of “deli” slices which are basically subs for deli meat sandwich fillers, flavours include chicken, turkey and stuffing, smoked ham, pepperoni... other veggie brands do similar too. Just use as you would the meat equivalents.
Quorn and others also do “picnic” type foods (which I know you haven’t asked for but you’re clearly open to not just sandwiches) like mini “scotch eggs” but the meat part is quorn with chopped egg in middle, cocktail sausages, sausage rolls... and other brands do “bites” which are like mini falafel but in loads of different flavours I shop with Sainsburys and like the “great food” bites.
Back to sandwiches:
Houmous
Roasted veg
Marmite
Veg sausages with onion or sundried tomatoes or a little chutney
Heinz sandwich spread
There are loads of veggie pâtés on the market now
If you go away from standard sliced bread and use rolls, wraps etc then:
Falafel
Tofu chunks with diced veggies, or quorn do “diced” “chicken fillets” which work great in wraps
Avocado I think works better in a crusty roll than sliced bread, with veggie bacon or diced tomato and onion, maybe a splash of Henderson’s relish.
I love and have for many years tartex yeast spreads, so much so a tube never lasts more than a few hours if I get it! Like a smooth pate, savoury/umami type taste depending which flavour you go for, best on toast but also works well with crusty rolls and crackers, I can quite easily munch through an unseemly amount of crackers if topped with this stuff very moreish.
Granovita veggie pate is good too.
My dd isn’t veggie but her favourite sandwich is mayo, quorn smoky ham flavour, grated cheddar cheese, and a little sauerkraut.
Another popular one in this house is Linda McCartney sausages fried (yea not healthy 😂) in the split lengthways halfway through cooking method, cranberry sauce (spread on the bread/rolls instead of butter style) and thinly sliced red onion
Another is in a “sub” type roll, cream cheese, diced celery and chopped cooked veggie bacon. Mix the 3 filling ingredients together in a bowl then spread in the roll.
