What are your favourite vegetarian comfort food dishes? I just made shepherdess pie, one for tomorrow and one for the freezer. Thinking macaroni cheese, baked potatoes, stew and dumplings, anything with puff pastry...

Macaroni cheese definitely.

Simple things like tomato soup and crusty rolls, cheese & onion on toast.

Vegetarian pizza - mushrooms, onion, capsicum peppers and jalapenos.

Falafel in pitta bread with salad, jalapenos and yogurt.

Sausage and mash (Sainsbo's Shroomdogs are brilliant)
Jacket potatoes with leeks and cheese

Am going to add to this that I recently discovered suet dumplings. Sounds vile and old-people-y but honestly. So good in a stew.

Jacket potatoes with crispy skins, with lots of butter.

Vegetable stew with sage and onion dumplings, all done in the slow cooker.

Pasta with mushroom, cheese and onion.

Veggie sausage and pear bake.

Mashed potato and peas with veggie pie or sausages.

Desserts - apple crumble and custard, cherry pie, warm chocolate sponge (the little microwave ones are good).

I make veggie stew with leeks, a bag of prepped carrot and swede and some dried veg mix like thus simmered in really good stock. I add veggie sausages sometimes and / or dumplings made with veg atora. It's all about the stock.

I make stock - onion, carrot, celery, pepper corns and any fresh herbs that I have knocking around. Simmer away then strain.

DS is veggie and his are:
Veggie chilli - made with sofritta (celery, onion and carrot very finely diced and gently cooked until soft in olive oil with garlic, then add chopped peppers in red, orange and yellow, diced courgettes, passata, very finely minced field or chestnut mushrooms to give it depth of flavour, smoky paprika a splash of red wine, chilli powder, cumin poder and a square of 70% dark chocolate, a can each of red kidney beans and black turtle beans. (Or rose cocoa beans - I prefer the milder beans but DS like the dark ones.)

Also veggie goulash - chunks of carrot, shallot, baby mushrooms, red peppers in passata with lots of smoked paprika and garlic, put veggie dumplings on top made with vegetable suet, flour, dried thyme, nutmeg, black pepper and salt and serve with sour cream.

He also loves dal and rice with spicy sag aloo.

Gnocchi bake with either creamy cheese sauce and leeks, topped with a nut and white breadcrumb crust or tomato, basil, olives and mozzarella topped with a cheese and brown bread crumb crust.

Stuffed squash - with bron rice, chopped nuts, crunchy onions and quorn mince if you like quorn mince.

DS also loves veggie meat balls made with veggie mince, chopped walnuts, shallots, soft dried apricots, fresh sage, black pepper, breadcrumbs and beaten egg, rolled into balls and baked. Very Christmassy smell - goes well with sweet potato fries or mash and baked red cabbage.

Does anyone have a really brilliant recipe for ratatouille. I've yet to make one that has that gorgeous rich depth of flavour and yet the veg still has texture.

@RemusLupinsBiggestGroupie I use marigold and kallo.

For ratatouille, roast the veg and make the tomato sauce separately, with lots of Tom purée and red wine. I always add stock powder to tomato sauce and sugar.

I do a weird version of ratatouille, because I don't like the normal one. I roast onions, garlic, peppers, courgettes and mushrooms with herbs and paprika, then stick a load of cherry tomatoes in it to form a vague kind of sauce.

Imo, the best veggie stock is Marigold vegan stock. It's much nicer than their vegetarian one. It has real depth of flavour.
@Remus - that sounds delicious but I'm still after that elusive perfect classic ratatouille recipe.
